During the lockdown period, I think I mastered baking Japanese fluffy toast bread ๐๐I'm satisfied with the fluffiness finally.
It's something big among Japanese living in Germany to try to bake Japanese style fluffy bread. I'm one of them. Some say flour is different, others say water is different etc etc. Then I used special flour called Manitobamehl, mixed in Tapioca starch ...
But at least for me rice yeast water (mixture of Koji, rice and water) is the best ingredient to make toast bread fluffy.
Just before it goes in the oven, it looks like this. So fluffy and light!
As my family likes Japanese fluffy toast bread, I bake 2-3 loaves a week.
