Quinoa Chow Fun (ovo-vegetarian dish) [ENG/ESP]

Hi friends, I always love to share in this community and today I want to share with you one of my experiments cooking with Quinoa.

In a previous post, I told you that I had discovered this wonderful food and I started to elaborate on several recipes which have turned out super delicious like this Chinese style sautéed Quinoa. It is an interpretation of the Cantonese dish Chow fun but instead of rice, I used Quinoa making it a low carbohydrate dish, rich in high-quality protein, high in fiber, and an option for those who practice ovo-vegetarianism. In addition, this recipe has an added value as it contains bean sprouts, a way to incorporate high amounts of vitamins and minerals into our diet.

Hola amigos, siempre me encanta compartir en esta comunidad y hoy les quiero compartir uno de mis experimentos cocinando con Quinoa.

En una publicación anterior les conté que había descubierto este maravilloso alimento y comencé a elaborar varias recetas las cuales han quedado super deliciosas como ésta de Quinoa salteada al estilo chino. Es una interpretación del plato cantonés Chow fun pero en lugar de arroz usé Quinoa conviertiéndose en un plato bajo en carbohidratos, rico en proteínas de alta calidad, alto en fibra y una opción para los que practican el ovovegetarianismo. Además esta receta tiene un valor agregado ya que lleva brotes de soja, una forma de incorporar altas cantidades de vitaminas y minerales en nuestra alimentación.

To make this delicious recipe you need:

  • 3 cups of previously cooked quinoa.
  • 1 cup of bean sprouts
  • 2 eggs
  • 1 teaspoon of chopped ginger
  • 3 tablespoons of chopped scallion
  • 1 tablespoon of diced red bell pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Para realizar esta deliciosa receta necesitas:
  • 3 tazas de quinoa previamente cocida
  • 1 taza de brotes de soja
  • 2 huevos
  • 1 cucharadita de jengibre picado
  • 3 cucharadas de cebollín picado
  • 1 cucharada de pimentón rojo en cuadritos
  • 3 cucharadas de salsa soja
  • 2 cucharadas de aceite vegetal
  • Sal y pimienta al gusto

Previously we must soak the quinoa for 4 hours and then cook it for 40 minutes. You must strain it well to be able to use it in the recipe.
Previamente debemos remojar la quinoa por 4 horas y luego cocinarla por 40 minutos. Debes colarla bien para poder usarla en la receta.

We will also previously prepare a thin egg-based omelet. Crack the eggs and place them in a container, add a little salt and ground black pepper, beat lightly, and place the mixture in a previously preheated non-stick pan. Once the omelet is cooked, let it cool and chop into small squares.
También previamente prepararemos una tortilla delgada a base de huevo. Cascamos los huevos y los colocamos en un envase, agregamos un poco de sal y pimienta negra molida, batimos ligeramente y colocamos la mezcla en un sartén antiadherente previamente precalentado. Una vez cocida la tortilla, dejar enfriar y picar en pequeños cuadros.

I will tell you that I grew the bean sprouts to use in this recipe at home, being a wonderful experience.
Les cuento que los brotes de soja a usar en esta receta los cultivé en casa, siendo una experiencia maravillosa.

In a frying pan preheat the oil and add the finely chopped ginger, stir well and add the chopped paprika.

Once the paprika changes to a softer texture add the quinoa and soy sauce. Mix well.

En un sartén precalienta el aceite y agrega el jengibre finamente picado, remueve bien e incorpora el pimentón picado.

Una vez que el pimentón cambie a una textura más suave agrega la quinoa y la salsa de soja. Mezcla bien.

When the quinoa is well soaked in the soy sauce add the bean sprouts, the chopped egg omelet, and the scallion, stir for 5 minutes, adjust the salt and turn off.
Cuando la quinoa está bien impregnada de la salsa soja agrega los brotes de soja, la tortilla de huevo picado y el cebollín, remueve por 5 minutos, rectifica la sal y apaga.

Esto que comparte me vino de maravilla porque tengo tiempo pidiéndole a mi esposo que compre, claro él lo ve costoso, pero cuando leyó tu post se interesó.

Querida @amandaj, de verdad es muy sencillo sólo sigue el paso a paso. El secreto es el remojo de la quinoa y luego cocinarla de 30 a 40 minutos, de resto es tal cual hacer arroz chino y por el chop suey que ví que realizaste en un post, seguro te va a quedar divino. Un abrazo y espero que me cuentes tu experiencia.
