Calajo is the local term of Ibaloi dialect which means welcome. Tinapay on the other hand is a Filipino term which means bread. And this bread house called itself Calajo's Tinapay. So that is literally "Welcome's Bread." 🙃
The bakery is located in a supermart building and is an extension food business of Calajo Restaurant at the second floor of the same building.
They have our common sponge cake called mamon. It is what I have ordered and paid for at first.
There is coffee dispenser and trays of siopao.
I went to the cashier to pay for mamon and a cup of coffee. Then I suddenly noticed the suman in front of me, right beside the cashier.
Suman is a rice cake originating in the Philippines. It is made from glutinous rice cooked in coconut milk, often wrapped in banana leaves, coconut leaves, or buli or buri palm (Corypha) leaves for steaming. It is usually eaten sprinkled with sugar or laden with latik.
"Oh, there are suman! How much is it? But it's okay..." I continiously exclaimed because I already handed my payment for mamon.
To my surprise, the cashier said I can just get suman if I want because the price is the same with mamon. I did get the suman!
Right across the dining area is a shelf of breads with many options to choose from. Behind this shelf is the grocery store.
The dining area is along the way to the stairway to the second floor where I bought the booklets required for year-end taxation.
I should mention that the building is located near our regional Bureau of Internal Revenue or BIR thus is convenient for buying the bureau's requirements.
There was a "self service" notice on the wall so I thought I would prepare my coffee. To my surprise, an assistant was done preparing my orders in a tray after I paid. She was already holding the tray on the way to the dining area and was waiting for me to pick a table. That was amazing service!
I can tell the suman was freshly made. It is steamed so it is watery thus prone to spoil faster than ordinary bread. That makes it not common to find suman in bakeries because of its sensitivity. That also makes suman being missed and sought of because of its rarity.
It was almost noon time and I knew I will be falling in line at BIR. That was actually the reason why I eat in the bakery while preparing the booklets. It was a very good decision because it became my lunch as I was able to get back home at almost four o'clock in the afternoon. Suman and cofee from Calajo's Tinapay saved the day!
