Garlic does not require much care, only the right materials for the cultivation of a healthy and exquisite plant.

Garlic is rich in nitrogenous substances, sodium, potassium, selenium, calcium, magnesium, silicon, hydrogen sulfide, phosphoric acid, vitamins C, D, B, phytosterols and essential oils. In addition, it contains allicin, which is obtained when the garlic is crushed or ground before eating. It should be noted that these benefits of garlic can be used to the maximum, as long as it is consumed raw. It is estimated that, when cooked, garlic can lose up to 90% of its properties.

Choose a head of garlic of the variety you prefer and separate the teeth, leaving their skin intact.
Garlic needs a fertile soil. If the soil in the orchard is very light it is recommended to add a layer of manure or a good compost. If we want to plant garlic in a flowerpot, just add a good amount of compost in it. Mature organic fertilizers should be incorporated uniformly in the field some time before sowing, to give time to decompose. If the fertilizer is abundant, it is not necessary to pay again, as this fertilizer is broken down little by little, supplying the salts continuously. minerals to the plant.

If we want to plant garlic in a pot, it is recommended that the pot be at least 25 cm deep. and a volume of 3 liters for each garlic. In the pot you can put more than one clove of garlic, as long as they are separated at least 8 centimeters apart

They are torn when the leaves of the plant have withered. They are left to dry in the sun for a few days, then braided. The braid is hung in a dry and airy place, this will help the preservation of the garlic.

The garlic can be taken green and tender (garlic), which is used as a condiment in tortillas and other stews, however the real big bite appears almost at the end of its cultivation. When the plant acquires about 30/40 cm. of height, a couple of weeks before the garlic is ready to be harvested, you can tear off and take the central shoot that they call porrino or ajo porro, without having anything to do with the leek, but they are more mature garlic , the bud is the stem where sometimes the garlic flower grows, this porrino, or garlic porro is a gastronomic delight that can be harvested equally and consumed as an asparagus.

In the middle of summer from June to August, (in the northern hemisphere), the leaves are totally desired. That's when it's time to pick them up. They will have spent 8 months planted, in the autumn plantations and only 4 months or 4 and a half months in the spring plantations. ADVICE ON THE CULTIVATION OF AJOS
The ideal is to grow garlic when the weather is warm, since sunlight is crucial for its germination. However, you can do it during winter, although you must take special care to get good results
Avoid over watering your garlic plant, because too much water can rot the clove of garlic that has been planted
The garlic harvest can take between 8 and 10 months, just when the outer leaves begin to turn brown. When this happens, you can dig up your garlic, put it in a cool and dry place for a week and you're done: you already have a garlic head for medicinal and culinary use
It is recommended to put a layer of "padding or covering" of straw on our garlic.
If the plant starts to bloom, it is recommended to cut it to channel the energy of the plant towards the production of garlic.
The bud of the garlic flower, which is cut, is considered a delight in many places. It is recommended to make salads with it.
