Hace unos cuantos meses atrás compartí una receta para preparar una torta de auyama/calabaza tipo quesillo. En esta oportunidad traigo una receta diferente pues esta torta queda esponjosa y a la vez tan húmeda... simplemente me encanta.

A few months ago I shared a recipe for an pumpkin cheesecake. This time I bring a different recipe because this cake is so fluffy and at the same time so moist... I simply love it.

Esta es una torta pequeñita, de hecho el molde que yo empleé es de unos 13,5 centímetros de diámetro. Así que puede decirse que esta mini torta rinde bastante bien como para dos personas.

This is a small cake, in fact the mold I used is about 13.5 centimeters in diameter. So you can say that this mini cake performs quite well for two people.

✔ 1 taza de puré de auyama

✔ 2 huevos

✔ 1 taza de harina de avena

✔ 1 cucharadita de polvo para hornear

✔ 1 cucharadita de canela molida

✔ 1 cucharadita de extracto de vainilla

✔ Endulzante al gusto (yo empleé extracto de estevia)

✔ 1 cup auyama puree

✔ 2 eggs

✔ 1 cup oatmeal

✔ 1 teaspoon of baking powder

✔ 1 teaspoon ground cinnamon

✔ 1 teaspoon vanilla extract

✔ Sweetener to taste (I used stevia extract)

PROCEDIMIENTO | PROCEDURE

➮PASO 1: El primer paso es separar las claras de huevo de la yemas. Batir las claras hasta llevarlas a punto de nieve (sabremos que están en el punto adecuado cuando veamos que se puede poner el recipiente boca abajo y las claras no se caen) y agregar el endulzante. Batir durante unos cinco minutos más.

➮STEP 1: The first step is to separate the egg whites from the yolks. Beat the egg whites until stiff (we will know they are in the right spot when we see that the container can be turned upside down and the egg whites will not fall out) and add the sweetener. Beat for about five more minutes.

➮PASO 2: Incorporar el extracto de vainilla y las yemas de huevo a la mezcla y batir durante unos minutos más.

➮STEP 2: Add the vanilla extract and egg yolks to the mixture and beat for a few more minutes.

➮PASO 3: Incorporar el puré de auyama/calabaza y batir hasta integrarlo por completo a la mezcla.

➮STEP 3: Add the pumpkin puree and beat until it is completely integrated into the mixture.

➮PASO 4: Incorporar los ingredientes secos tamizándolos y mezclar con ayuda de una paleta para evitar que la mezcla pierda volumen.

➮STEP 4: Sieve the dry ingredients and mix them with the help of a palette to prevent the mixture from losing volume.

➮PASO 5: Coloca la mezcla en un molde previamente engrasado y enharinado. Golpea levemente el molde contra una mesa para eliminar burbujas de aire dentro de la mezcla y para emparejarla. Hornear durante 30 a 35 minutos a 180 °C (esta es un tiempo estimado, pues este realmente dependerá de la potencia de cada horno).

➮STEP 5: Place the mixture in a previously greased and floured mould. Tap the mold against a table to eliminate air bubbles inside the mixture and to even it out. Bake for 30 to 35 minutes at 180 °C (this is an estimated time, as it will really depend on the power of each oven).

Esta es una receta ideal para quienes aman las recetas donde la auyama es la protagonista y también para quienes les gusta disfrutar de un postre saludable a media tarde.

This is an ideal recipe for those who love recipes where the pumpkin is the protagonist and also for those who like to enjoy a healthy mid-afternoon dessert.

Una recomendación importante es que para preparar el puré, es mejor cocinar la auyama al horno o al vapor. También puede cocinarse hervida, pero de esta forma hay que procurar colarla y dejar que drene la mayor cantidad de líquido posible.

An important recommendation is that to prepare the puree, it is better to cook the pumpkin in the oven or steam. It can also be cooked boiled, but this way you have to try to strain it and let it drain as much liquid as possible.
