Greetings dear friends, I am here to leave you my proposal of my version of tabbouleh, to leave my participation in the contest (https://peakd.com/hive-120078/@lotusshares/plant-power-cooking-challenge-or-week-9-or-come-join-us) of the @naturalmedicine community.
First of all I want to tell you a little bit about tabbouleh is a delicious dish that I had the joy of consuming a lot since I have Arab descent and among the Arab dishes that my grandmother prepared this was always a good companion of the lunches in her house.
Tabbouleh is a very typical salad in Arab food, mainly from Lebanon, it is very easy to prepare and a very complete vegetarian meal. The original recipe includes wheat semolina, mint, parsley, tomatoes, onion, salt, pepper and lemon juice.
In this opportunity to validate my entry to the contest I resorted to my creativity after several days thinking about how to participate I got it and was versioning the tabule recipe replacing the mint and parsley for the host of the week which is spinach.
Without further ado, here is the recipe.
Ingredients.
Wheat semolina 150 Gr.
Spinach 200 gr.
Tomato 2 units.
Onion 1.
Lemon 2 units.
Salt and pepper to taste.
The preparation.
The preparation is very simple, we take the wheat semolina in a container and add enough water and let it hydrate for at least 45 minutes, meanwhile we wash the tomatoes, the onion and the spinach.
Once washed, chop the tomatoes and onion into small cubes and chop the spinach finely, drain the semolina and in a bowl add the spinach, tomatoes and onion, add the drained wheat and mix everything.
Once everything is integrated, season with salt and pepper to taste and add the lemon juice, stir everything and ready to serve.
This salad can be served as an appetizer, as an accompaniment to a main dish, or as a complete meal since it has spinach and wheat semolina and generates a lot of satiety.
I hope you like the modification of this recipe and I hope not to offend my descendants by modifying it since many people think that the typical should be respected but it is a very good version I also recommend preparing it with watercress is another very divine and healthy option.

Primero que nada les quiero contar un poco del tabbouleh es un rico plato que tuve la dicha de consumir mucho ya que tengo descendencias árabes y entre los platos árabes que mi abuela preparaba este siempre fue un buen acompañante de los almuerzos en su casa.
El tabbouleh es una ensalada muy típica en la comida árabe principalmente del Líbano es de muy fácil preparación y una comida vegetariana muy completa, la receta original incluye sémola de trigo, hierbabuena, perejil, tomates, cebolla sal pimienta y zumo de limón.
En esta oportunidad para hacer valida mi entrada al concurso recurrí a mi creatividad después de varios días pensando en como participar la conseguí y fue versionar la receta del tabule reemplazando la hierbabuena y el perejil por el anfitrión de la semana que es la espinaca.
Sin mas preámbulos les dejo la receta.
Ingredientes.
• Sémola de trigo 150 Gr.
• Espinaca 200 Gr.
• Tomate 2 unidades.
• Cebolla 1.
• Limón 2 unidades.
• Sal y pimienta al gusto.
La preparación.
La preparación es muy sencilla tomamos la sémola de trigo en un envase y le agregamos suficiente agua y la dejamos hidratando por lo menos 45 minutos, mientras tanto vamos lavando los tomates, la cebolla y la espinaca.
Una vez lavados picamos los tomates y la cebolla en cubos pequeños y picamos la espinaca bien menudita, escurrimos la sémola de trigo y en un bol agregamos la espinaca, los tomates y la cebolla le agregamos el trigo escurrido y mezclamos todo.
Una vez todo integrado precedemos a sazonar con sal y pimienta al gusto y le agregamos el zumo de limón revolvemos todo y listo a servir.
Esta ensalada sirve como aperitivo, como acompañante en un plato principal, o como una comida completa ya que por tener espinacas y sémola de trigo genera mucha saciedad.
Hasta aquí mi entrega de hoy espero les guste la modificación de esta receta y espero no ofender a mis descendientes por modificarla ya que muchas personas piensan que lo típico debe respetarse pero es una muy buena versión también recomiendo prepararla con berro es otra opción muy divina y saludable.

Tabbouleh with spinach is such a good idea! I have never thought of it. I was just going to make tabbouleh with parsley but I may change my mind. Thanks for the idea!

Pretty good idea, I'm sure spinach compliments tabouleh well, although I'm not sure I've ever combined the two ingredients myself. Culinary creativity on display for all to see.

Yum! I love a good tabbouleh! I think it's nice sometimes to adjust a base recipe depending on what you have or what may be in season. I just made a version a few weeks ago with hemp hearts instead of the wheat, which gives a similar texture but slightly different flavor and nutrition profile. I'm sure spinach is a great accompaniment!
Yes, everything is trial and error, and as you say, if we adapt the recipes to seasonal vegetables, freshness will always prevail.
