Homemade Pea Soup - With Chicken & Bacon

Hello you, hungry people of Hive and foodies! How are you all doing today?

I decided it was a perfect day to cook some homemade goodness, mainly because I had all the ingredients already. A huge disclaimer would be that I am by no means a good cook, I just try my best. And since I have a toddler, the recipe is a bit adjusted to his needs.

Ingredients:

  • 2 carrots
  • 1 yellow onion
  • 2 cloves of garlic
  • Chicken breast
  • 2 strips of bacon
  • Pea (one bag frozen)
  • Salt and pepper
  • 2 tablespoons of flour
  • 1 teaspoon of paprika
  • Butter and olive oil

It's really not difficult to make (you already know that since I made it and lived to tell the story), but it is time consuming (takes about 2 hours to fully cook and not burn it).

I usually start all my cooking with preparation of the ingredients, I chopped the veggies up and the meat. The carrots are cut in two ways because my kid likes to eat bigger peace, but feel free to chop it all finely.

I have to say that I am in love with the garlic press, so it had to make an appearance in one photo. I melted some butter in olive oil and browned the chicken and bacon, and put them aside, then in the same pot added the veggies and a bit of water. That simmered on low heat for almost an hour (add water when needed).

Ok, now that that is simmering I had time to read a book and have some much needed coffee. The book is about parenting and how to connect and emotionally support your child. I like it so far.

When the veggies soften a bit, you can add the meat and water and let that simmer for a half an hour. The water will evaporate eventually, so I added it a couple of times.

I use Himalayan salt and freshly grounded black pepper, and very little salt to be honest, mainly because of the little one.

After time has passed and I tasted the veggies (especially peas) and decided that it was cooked, I added a bit more water, flour and paprika, mixed it all well and left it on the stove for a few minutes more.

And voila, our homemade soup was ready to be served!
