Not sure about the name, but the pastry and stuff look very similar. Should be like Bika Ambon
I see. Both martabak and bika ambon have that spongy look, but texture-wise, bika ambon is denser, whereas martabak manis is more tender. I think Bika Ambon is healthier also since the sugar level on Martabak could be so deadly hahaha

It is called Hok Lo Pan or Min Jiang Kueh or Ban Jian Kueh , maybe you can find a pancake with that name there.
