gm! fellow foodies! I have another gem to share with you all.. again, here in Chiang Mai. This spot is just a few minutes' walk from my shop. Funnily enough, I'd never visited it until recently, even though it's always been there. I think I've mentioned this place before but for a different type of cuisine. I've been back a few more times to try some unique dishes.
This time around, we ordered items that are hard to find elsewhere. Let's dive in dish by dish to explore what I mean by "beyond fusion."
First up, the appetizer, crispy deep-fried wontons stuffed with pork. Pork wontons are already delicious, but these have an added twist—salted egg yolk in the middle, enhancing the umami flavor. Paired with plum sauce, this appetizer is downright perfect. It's so good, I could snack on it all day!
Moving on to the second dish, stir-fried rice with fried fish. It sounds simple, but it's actually not that easy to find here. This dish brings back memories.. it's the kind of thing my mom or grandma would make for me as a kid. It's simple but dang, hella good!
For the third dish, if you're looking for something refreshing and mildly spicy, try the spicy guava salad. It could serve as either an appetizer or a pallete cleanser. Spicy salads are common here, especially with papaya, but guava-based salads are rarer, making this a unique must-try.
Now, for another mind-blowing dish, Khao Soi. Wait a minute, wait a minute.. Instead of the traditional noodle soup with coconut milk based, this version is dry, stir-fried with Khao Soi curry paste and topped with Northern Thai-style sausage. I've never seen this dish anywhere else, and it truly blew my mind.
So that's pretty much it for this meal. I've also raved about their boat noodles, which are equally amazing. I'm confident that anything you order from this place will impress, as they consistently serve high-quality, delicious Thai food. Way Beyond Pad Thai approved! :D

Spicy guava salad is new to me. I hope there's any available here in my place for me to try. I always want to explore other cuisines to know their cultures and traditions.
