A soup to regain energy, friends! In Venezuela we usually make a beef soup on Sundays; We also make it from hen, chicken, tripe and fish. For this weekend we decided to make it from beef. A very tasty, easy, inexpensive and very nutritious soup, made on firewood in the fireplace in my backyard, a soup to share with the family. I hope you like it!.
INGREDIENTES:🌶🥕🍖
- 2 kilos de carne de res con hueso, 2 kilos de yuca, 1/2 kilo de auyama, 3 zanahorias pequeñas, 1/4 kilo de apio, 1/4 kilo de ocumo, 8 cambures verdes, 5 ajíes amarillos dulces, 4 ajíes rojos dulces, 2 pimentones, 1 kilo de papas, 1 ramito de cebollin 1 ramito de cilantro, aceite para freír, 1/4 kilo de repollo, sal al gusto, 1 olla con agua, 2 cebollas, vainitas.
INGREDIENTS:
- 4.40 lbs of bone-in beef, 4.40 lbs of yucca, 1.10 lbs of squash, 3 small carrots, 0.55 lbs of celery, 0.55 lbs of pumpkin, 8 green bananas, 5 sweet yellow peppers, 4 sweet red chili peppers, 2 bell peppers, 2.20 lbs of potatoes, 1 sprig of chives, 1 sprig of coriander, oil for frying, 0.55 lbs of cabbage, salt to taste, 1 pot with water, 2 onions, green beans.
PREPARACIÓN:🍵
PASO 1:
- Lavamos, pelamos y cortamos las verduras (zanahoria, yuca, papa, cambur verde, apio, ocumo, auyama, repollo) y los aliños (cebollin, cilantro, ajíes, cebolla) y vamos reservando en varios platos.
- En una olla con agua, agregamos la carne y los huesos, prendemos el fogón y ponemos a hervir por 2 horas hasta que este blando.
PREPARATION:
STEP 1:
- We wash, peel and cut the vegetables (carrot, yucca, potato, green banana, celery, pumpkin, cabbage) and the dressings (chives, coriander, sweet peppers, onion) and we reserve them in various dishes.
- In a pot with water, add the meat and bones, turn on the stove and boil for 2 hours until soft.
PASO 2:
- Agregamos las verduras, aparte en un sartén con aceite hacemos el sofrito con los aliños.
- Agregamos el sofrito y mezclamos.
- Esperamos que la verdura ablande, cortamos finamente el cilantro y añadimos.
- Quitamos la olla del fuego y dejamos reposar por 20 minutos y a servir amigos.
STEP 2:
- We add the vegetables, apart in a pan with oil we make the sauce with the dressings.
- Add the stir-fry and mix.
- We wait for the vegetables to soften, finely chop the coriander and add.
- We remove the pot from the heat and let it rest for 20 minutes and serve friends.
