BISS of March contest | Forest sandwich

My March sandwich for @mondoshawan's #biss sandwich contest, is made of fried mushroom that I found in the freezer, homemade bread spread with some wild garlic pesto and a slice of pickled paprika.

Ingredients for pesto:

  • 100 g of wild garlic leaves
  • 60 g of ground walnuts
  • a tablespoon of nutritional yeast
  • a garlic clove
  • 3 tablespoons of olive oil
  • 3 tablespoons of water
  • salt to taste

Preparation:

  1. Roast walnuts in a hot pan and grind it in a blender.
  2. Chop wild garlic leaves and garlic clove in mix it with walnuts. You can also use blender for it, but I didn't as I like bigger pieces of herbs in my pesto.
  3. Add nutritional yeast and olive oil. Slowly add some water until pesto become smooth. Add salt to taste and let it sit in the fridge for at least 10 minutes.

Ingredients for fried mushroom:

  • parasol mushroom
  • 3 tablespoons of corn flour
  • 4-5 tablespoons of water
  • a pinch of turmeric
  • a pinch of salt
  • some breadcrumbs
  • 5 tablespoons of olive oil
  1. Mix corn flour, water, turmeric and salt until it becomes smooth.

  2. Dip mushroom in the mixture and cover it with breadcrumbs.

  3. Fry it in some olive oil.

Who needs a chicken schnitzel burger when you can have this? Looks so good!
