Starting from scratch.
Part 1
Plant raspberry canes and wait a couple of years.
Part 2
Make a compote by boiling fresh raspberries, straining the fruit to collect the juice, add brown sugar and reduce (simmer) until it's a concentrate.
Part 3
Pick raspberries before the birds get to them - be quick or they'll have half your crop - and I mean literally half your crop.
Forget the part numbers and go with the flow...
Collect the fruit, soak for a couple of hours (the fruit, not you) and wash gently. You have to be gentle, they're not called 'soft fruits' for nothing, it really is easy to wash them away under a fast-running tap.
Take a dozen or so of the most perfect raspberries - actually, don't worry if they're symmetrical and gorgeous, you're just going to cover them and boil them in their own juice anyway, just choose those without grubs inside, and / or dried, gnarly parts on the outside.
Flour and brown sugar in equal measure and a half measure of butter - basically, this is the recipe a 2-2-1 in measure. Whatever you use, you need half the butter.
Mix the dry ingredients.
Add the butter.
Mix and crumb the ingredients.
Spoon the mixture onto the raspberries.
Slam it in the oven. 180 degrees - I don't know the equivalents, look it up ;)
This is where you need the compote.
Cream is optional.
Drizzle the compote and cream (optional) and enjoy.
Better than the football.
I bet you could use different types of berries for this too.
Great recipe thanks for sharing it. Did you get this recipe from your Mother?
I will be right over to have some. :)
Yes, most fruit works for this one. I use individual pots because it's a lot better for my waistline - I'd never stop if it was one large crumble - it's SO delicious!
No, I never got the hang of cooking from my mother or grandmothers. Trev's mum helped me lots and I just give things a go, make stuff up... unless it's really complicated (panacotta) and then I follow the recipe to the letter. I also like Jamie Oliver's methods and I record his shows and binge-watch just before Christmas :)
@michelle-gent I am enjoying your story and also signed up for your newsletter.
How exciting.
You are a blessing to me. ❤️
That looks so yummy! Not sure if it's on my diabetic menu, but I'd love it! :) xox
I like this option better than football! lol Right now I have a surplus of mangoes and of course, the birds love the ripe ones. I just might try this with the ripe mangoes I have managed to save from the birds. I find usually the made up recipes are the best.
Nice recipe! I will try with kind of berry in our farm. Thanks for sharing.
Looks absolutely incredibly delicious :) Thanks for sharing this @michelle.gent . I have always loved Raspberries as they're great for the heart, no question !
Thankyou for sharing. This good information.
