Cherries are usually bright red or deep brown red when ripe and may be deliciously sweet or quite tart depending on the variety. Sour cherries have a lower sugar content and a higher acid content than its sweet counterpart. The fruit is fleshy with thin skin and a seed in the center, it is generally heart shaped to nearly round shaped, about 1 inch (2 cm) in diameter. Cherry trees flourish in deep, well drained, fertile clay soils. They can grow up to 36 feet (11 m) tall and have alternating simple oval leaves. The flowers are white and appear in clusters of about 3–5 and they require cooler climates rather than hot ones. The sweet cherry originated in the area between the Black and Caspian Seas in Asia Minor. It is likely that bird feces carried it to Europe prior to human civilization. Today the Cherry fruit is found in Asia, Europe, and North America, with Iran, Turkey, United States, Germany, and Italy leading in the production. Together these countries grow over one million metric tons of cherries annually. Cherries are high in vitamin C, carbohydrates, and include trace amounts of fiber, protein, vitamin A, vitamin B1, vitamin B2, niacin, calcium, phosphorus, iron, and potassium.
