I used to eat the cactus in the eighth picture down. We grew a few plants in Arizona then cut off the spines and dices them up raw or cooked with onions and a bit of lemon juice.
Yes, all parts of this prickly pear are edible.
Probably I should try, especially since you wrote how you eat it.
