To make this spicy, sour and slightly sweet sliced bamboo shoot pickle, you should choose a bamboo shoot which is fresh, firm and young so that its edible part is crunchy, spicy, sour and a bit sweet flavor.. You can also make delicious fish soup with this chili salted bamboo shoots.

Step 1:
Peel back the hard layers, wash clean, and cut the tips at an angle of bamboo shoots. I will take only softs inner portion of the bamboo shoots. Slice the bamboo shoot into thin use a completely clean. Soak bamboo shoots in water for a few hours to remove the pungent smell.

Boil water and cool down, then add salt, sugar, vinegar to dissolve. Use dry jar for pickling the bamboo shoot. Place the sliced bamboo shoot into the jar, add chopped chili and garlic. Fill with mixed water to the top, stir to combine. Close the lid tightly and sunbath it for a week in the sun or for atleast 2-3 days for places with proper sunlight. When the bamboo shoot is ready, you should put it into the fridge to reserve it longer. Serve this dish with vermicelli or rice. :D

Đậy chặt nắp và phơi dưới ánh nắng một tuần hoặc ít nhất 2-3 ngày ở những nơi có ánh sáng mặt trời thích hợp. Sau đó để măng vào tủ và bảo quản nó nhé. Ăn kèm với bún hoặc cơm. :D
