Hedge Cactus Fruits Are Here!

in #foodlast year

My night blooming cactus, or Hedge Cactus as it is commonly known, gave its first fruit of the season and I couldn't be more excited!
This type of cactus is similar to the saguaro and the fruit very much resembles dragonfruit. My dragonfruit harvest this year was nearly nonexistent so I was glad to see my cactus was growing these fruity bulbs like crazy! Unlike the prickly pear fruit, this fruit has no thorns but rather a smooth thick skin that allows you to scoop out the fruit with a spoon easily! The taste is similar to dragonfruit but a lot more citrusy and sweet, almost like a green apple. We usually eat them as is or add them to smoothies, fruit salads or muddle into sparkling water cocktails with a slice of lemon. It truly is a wonderful fruit!
Have you ever had one before?
May your home be filled with warmth, your pantry full and may you always have good health!
