Why was the rap star confused? Because he ended up becoming the taco-the town! ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚

Oh, I am cracking myself up! Maybe too much quarantine for this gal!

I just love smooshing my food into other food to eat it all together... don't you?

I mean, I'm talking tacos and pitas and tortillas and buns... Oh my!

I could eat all of that forever except... most wraps have tons of sticky gluten in it that wreak havoc on my tummy sooo... you already know my philosophy--

you can't give anything you love up-- you have to replace it with something better!

In that case I give to you something resembling a cabbage roll that partied a bit hard with tacos and got all confused (maybe a little bit tipsy) and the result is delicious.

  • You've got your spicy guac
  • You've got your flavor-packed "mince"
  • You've got some hot sauce on the side
  • You've got your salsa playing hide and seek
  • Andddd you have your special gluten free super-hero ingredient to tie it all together-- Chinese cabbage!

The Confused (W)Rap Star!

What You Need:


Guac:

  • 1 avocado
  • 1/2 lime (juice only)
  • 1/2 tomato
  • 1/2 tsp onion powder
  • 2-3 garlic cloves
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1-2 pieces of fresh coriander

Salsa:

  • 2-3 tomatoes
  • 1/2 onion
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1/2 jalapeno
  • 1-2 garlic cloves
  • 1-2 pieces of fresh cilantro
  • 1/2 lime (juice only)

Mince

  • 1-2 eggplant
  • 1/2 yellow bell pepper
  • 1 cup lentils (cooked)
  • 1 tbsp Bragg's liquid aminos
  • 1 tbsp veggie broth
  • 1 tsp paprika
  • 1/2 tsp pink Himalayan sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • touch of cayenne

Wraps

  • Chinese cabbage leaves

What To Do:


Guac:

  1. Mix everything into a food processor except the tomato and blend until smooth. Add in the tomato and pulse gently to create chunks. Set aside.

Salsa:

  1. Put all of the ingredients into a food processor and pulse slowly to retain chunks or blend until smooth if that's what you prefer!

Mince:

  1. In a skillet, combine all of the ingredients and mix together on medium heat. Cover the skillet so the steam will make the eggplant tender. Stir frequently. It's finished when the eggplant is soft to a fork's poke.

Wraps:

  1. Steam the leaves just gently so they are moldable and set them aside

  2. Fill the wraps with all of the above and some hot sauce if you like things spicy! Wrap them up and fold the bottoms up so the juices don't spill out!

Note: Feel free to add some vegan cheeze! if you have some or have time to whip some up!
