Alright friends, this whole binge eating thing is getting a little out of control am I right?

But I have a solution for you!

Well, how can you have a satisfying bite to eat that fills you up but is also healthy for you, gives you energy and packs your body full of the nutrients you need? Look away from the potato chip bag mon ami!

You get a big bowl and a lot of veggies and you sauce them up nice and hot-- that's how!

But don't grimace, don't sigh and don't you dare roll your eyes at me!

We don't need to be eating raw carrots out of the crisper here.

Let's make something--

  • Delicious!
  • Creamy!
  • Flavorful!
  • Spicy!
  • Crunchy!
  • Savory!

You can eat everything here raw if you want but I like to heat mine up a bit with spices to gimme a hot-bowl if you will!

There is something good in every bite and the sauce dripping all over the place will surely keep you locked into the experience forgetting all about the not-so-good-for-you-food you've been trying to avoid!

This bowl is massive and kept two hungry bellies full for a lonnngggg time!

HOT BOWWWL!

What You Need:


Sauteed:

  • 1 bunch kale
  • 1 red bell pepper
  • 1 bunch spring onions
  • 1 cup green beans
  • 1 cup snow peas
  • 1 tsp curry powder
  • 1 tsp onion powder
  • 2 tbsp veggie broth
  • 1/2 tsp olive oil

Toppings:

  • 2 cups steamed pumpkin
  • 3 tomatoes (diced)
  • 1 avocado (cubed)
  • 2 cucumbers (coined)
  • ¼ cup vegan cheeze
  • ¼ cup roasted walnuts
  • sauerkraut

Dressing:

  • 3 tbsp tahini
  • 1 lemon (juiced)
  • 2 limes (juiced)
  • 1 tbsp curry powder
  • ½ tsp onion powder
  • ½ tsp pink Himalayan sea salt
  • 2 tbsp water

What To Do:


  1. Chop the kale, spring onion, red bell pepper, green beans and take the stems off the snow peas then add them to a skillet with the olive oil and spices on medium heat
  2. After a couple of minutes, add in the veggie broth, cover with a lid and turn down the heat to low, let simmer to cook through
  3. Chop up the tomatoes, cucumber, avocado and pumpkin pieces and set them aside
  4. Juice the lemons and limes then add in the tahini, curry and onion powder with the pink salt (add water to get the consistency you like best!)
  5. By this time, your veggie saute should be ready to go! Let it cool down, then add to a big bowl and mix all of your toppings in
  6. Pour the dressing all over, top with the vegan cheeze, roasted (optional to roast them) walnuts and sauerkraut and enjoy!
    Note: the vegan cheeze I use is made from sunflower seeds-- it's super easy to make your own!

I think you could do it just fine. I don't edit at all, just speak my truth and let it go out as it wants to. That's key for me, just letting the messages come/flow out.
