I hope you're hungry for some cookies, LOL!

I figured I would share this pic of the batch I just made. I rarely get time to do anything these days except home school my daughter, which is a major challenge! I have not made a post in a long while, as time is a rare commodity these days... and I can't wait for summer vacation!

So I decided... heck with it, I am taking time to get my head out of the school zone for a few minutes, and make some cookies for my daughter.

And I figured you might like to try some of these AWESOME Peanut Butter & Chocolate Chip Cookies for yourself.

These are a tasty treat, here is the recipe if you want to give it a go. It's an easy recipe to follow.

Tom's Peanut Butter & Chocolate Chip Cookies

Ingredients List:

1 cup salted butter(room temp)
1 cup Peter Pan Honey Roasted PB
1 cup sugar
1 cup brown sugar
2 large eggs
2 1/2 cups of flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
1 cup mini chocolate chips

Steps:

  1. Preheat oven to 375 f.
  2. Combine flour, baking powder, salt and baking soda in a large mixing bowl, whisking until thoroughly mixed.
  3. If your butter isn't room temp, microwave until almost melted.
  4. Add sugar, brown sugar, peanut butter, salted butter, and eggs into another large mixing bowl, stirring until thoroughly mixed.
  5. Add the wet to the dry bowl, and combine them together to make the rough dough.
  6. Add mini chocolate chips into dough, and combine thoroughly.
  7. Place the cookie dough into the refrigerator for 1 hr.
  8. Once dough is cool, use a silverware small spoon to grab a bit of dough and roll into a ball, roughly an inch round, or about the size of a fifty cent piece. Place your balls on a large cookie sheet(x12).
  9. Use the tines of a fork to make a cross hatch pattern and flatten your balls. Use some sugar instead of flour to keep fork tines from sticking.
  10. Bake for 7-8 minutes or until the edges are golden brown.
  11. Place cookies on a cooling rack and finish with a small sprinkle of sugar.

Do not over bake the cookies, as these are supposed to be a bit soft, so you don't chip a tooth when you bite into them. ;-) Use the above photo as a guide.

You should wind up with 4 dozen cookies. Enjoy!

Photo is mine.
