Good morning my friends and happy weekend, an easy recipe for a very healthy food today with easy ingredients and easy cooking way .... let’s see

Ingredients

Giant beans or elephant beans . You can also use giant black beans.
Tomato. Either very ripe fresh and local or canned tomato (I find the canned tomato tastier than the usual grated tomato in the box).
Parsley or celery.
Onion
Grated carrot
Oregano
Olive oil
Salt and freshly ground pepper.

Preparation

1 Soak the giants from the night before in a large bowl with enough cold water.

2 Then strain the giants and throw them in a deep pot, fill it with water and simmer for 40-50 minutes until the giants soften, skimming them at regular intervals.
3 Once they are ready, strain them and keep 200 ml of boiling water.
4 In a small frying pan pour half the olive oil and heat it over medium heat. Add the onion, garlic, Florin peppers, celery, carrots and cook for 5 minutes until caramelized.
5 pour the giants into a fireproof dish, add the vegetables, the crushed tomato, the rest of the olive oil, the boiling water, the dill, the salt and the pepper.
6 Preheat the oven to 180 ° C in the air and bake for 50-60 minutes until the giants are cooked and well cooked.
7 Once they are ready, serve them hot from the oven.
