Making & Canning Tomato Sauce for Winter

We had a decent harvest of amish paste tomatoes this year which we supplemented with some heirloom, organic roma tomatoes from the local Farmers Market.

After washing, core and score your tomatoes

Blanche and cool them next

Then the skins should slide right off

Or you may have to peel them

Blend tomatoes and simmer on the stove

Sanitize the jars and prepare the lids

Fill jars and pressure cook

Take out to cool and listen for the sound of success

Any failed jars will have to go in the fridge, but we had a 100% success rate this time, even though it'd been 7 years since we last canned. Old habits die hard ;)

This year 2021 we went full steam ahead on tomatoes. We were constantly bringing back flats from the Farmers Market, adding the ripe ones from the garden and making and canning sauce. We made sauce from scratch from fresh tomatoes all the way until November so we didn't have to open our canned food well into fall.

Another very worthwhile and rewarding home project. I remember 2013, that was quite a harvest, after years of barely getting back our seeds. We canned up a storm, but it has literally been 7 years since the stars aligned for it to happen again. After brushing up on technique, and remembering Grandma's lemon juice trick, it went very well. Looking forward to canning another round or two this week!

Oh yeah! It's a satisfying day of work starting with a sunny walk to the Farmers Market, we bet. It's definitely not for the instant-gratification type who don't like to learn new things or improve on skills. The finished project makes it SO worth while. Doing things the easy way makes for a hard life a vice versa! #doityourself ;)

Oh yeah! I remember tomatoes coming out our ying yang! The harvest was fun, the plants were massive to rip out after. We had so many, and some not even ripe yet but we had to get them off the vine and there were boxes of tomatoes wrapped in newspaper. Mmm good times! The lemon juice trick was good. I twas nice to have a real lemon on hand.

Good call! It's smart to always have at least 1 fresh lemon ready to go.
A small tree someday would be great (and somewhere to put it).
