Stir Fry Veggies with Sweet Peanut Sauce

Let me share another easy and affordable recipe which is slightly can be compared to Lumpiang Sariwa.

Lumpiang Sariwa is a Filipino dish that uses vegetables like cabbage, carrots, sayote, singkamas and lettuce for garnish. It is rolled in rich flour batter cooked in non stick pan. It is like an egg roll but it is not fried. Anyways, sariwa means fresh so it is fair to say that it has a semi raw texture.

Actually the vegetables needed to stir fry, I guess the word term sariwa prefers to the soft batter that serves as it's outer look fresh.

In this recipe, it doesn't come with that. Some called it Lumpiang Hubad. Hubad means naked so the easy way to understand is that this recipe didn't have clothes okay? Kidding aside, it has the same sauce that completes any lumpiang sariwa/ubod recipe.


Ingredients:

½ of whole cabbage
3 small carrots
1 large sayote
3 cloves garlic + 2 cloves for sauce
1 medium size white onion
peanuts
brown sugar
salt and pepper to taste
2 tbsp of flour (slurry)

Here's how:

1.In a pan with vegetable oil, saute onion and garlic. Once it turns slighty brown add sayote and carrots.

2.Put some salt and allow to cook for 2-3 minutes with continous stirring to prevent it for burning. Adjust the heat on medium heat.

3.Add chopped cabbage and blend them well. Give a stir and let it cooked with stirring for 3-5 minutes or until all the vegetables are well cooked.

For the Sweet Peanut Sauce

1.In a sauce pan with 1 cup of water, add minced garlic, brown sugar and flour. Give a stir till well combine.

2.Turn on the stove and let it simmer until it thickens. Make sure to do continous stirring while simmering. Cook over low heat.

3.While simmering add chopped salted peanuts and let it cook or until it thickens. Cool and set aside.


Final Look and Tasting

Use separate bowl for the sauce. I saved some peanuts and put some right into my plate. I know that it is not an ideal to serve with rice but it is quite good.

I loved the taste of the sauce. The peanut, sugar and garlic blended so well. The texture of chopped peanuts and garlic are so good. This is a good snack too and very easy to do. Thank you for dropping by.
