We have been firing up the grill since the weather has been nice. This recipe is pretty simple and relatively healthy.

Ingredients
2 Zucchinis
1 Red bell pepper
2 Red onions
3 Broccoli crowns
15-20 Cherry tomatoes
2 larger vine ripe tomatoes
1/4 bacon
1 package Gnocchi
Burrata cheese
Spices
Garlic powder
Onion powder
Red pepper flake
Dried parsley
Salt
Pepper
Cayenne powder
First up is prepping the vegetables. Half the tomatoes and cut the remaining vegetables to taste. In a large bowl combine spices and vegetables with olive oil. Toss the mixture until the vegetables are fully coated in the spices and oil.
In a large sauce pan bring water to boil and add Gnocchi with some olive oil and salt. Cook the gnocchi until tender and transfer to a bowl.
On high, grill the vegetables until slightly softened, but make sure they still has some texture. You may have to remove vegetables that cook quicker than others. I will typically remove the tomatoes first.
In a large, pan fry off bacon until crispy. Retain the bacon grease and add gnocchi to the grease. Fry until slightly crisp and golden brown. Add a little butter to create a sauce.
In a bowl combine vegetables, gnocchi and sauce. Crumble some bacon on top. I typically use two pieces per bowl.
We finished our dish with the cheese that when broken open adds a little bit of cream which helps create a more liquidy sauce. If you like your meal spicy finished with some extra red pepper flake and enjoy!

Nice! I just recently started eating a bit more gnocchi. There is this premade stuff at Trader Joe's that my wife and I really love. It is so good. This looks delicious!
We have never made it from scratch either. The pre-made Gnocchi are delicious.
