Potato burger lasagne

No lasagne sheets,no problem,still no lasagne sheets in the shop so I improvise,so For fruitsandveggiesmonday I have made a lasagna,but instead of lasagne sheet I used potato slices, and I used some soy burgers instead of mince.

First I parboiled some massive potatoes

Then peel them

And slice them up

For the next layer I made a burger tomato combo,starting with onions and garlic

Chopped up burger

Chopped tomatoes

Tomato pasta with dried basil,pepper,coriander and two veggie cubes with a teaspoon yeast extract

That gets poured over the sliced potatoes

Then I made a mushroom sauce and poured it over ,and sprinkled some yeast flakes on top instead of cheese

Then baked it for an hour

And that’s my potato burger lasagne,not a bad starch to the week hey 😜
