Left over Curry Mince Sandwich from Silver Mamma Chef's Kitchen

It's Sandwich time again.

Silver Mamma Chef made her favorite Curry mince for dinner the night before and had some left overs.

So!... guess what we had for breakfast?
Yes...left over curry mince on toasted rye bread, with a poached egg on top.

Silver Mamma Chef was in two minds whether to do a fried egg or just poach it.
Well! she decided on poached; I mean...poached is much healthier than fried, don't you think?

So off she went to her kitchen and warmed up the left over curry mince while preparing the toast.

INGREDIENTS

Salad

  • 2 Grated Carrots

  • 1/2 a Onion sliced thinly

  • 2 Chilies

  • Left over Curry Mince and potatoes

  • Poached egg on top

  • Rye Bread sliced for toasted sandwich

She didn't make her own bread this time, so Papa Chef went off to the local bakery and bought some lovely fresh Rye Bread, which Silver Mamma Chef toasted in the oven.

She covered the toast with delicious curry mince.
"Curry always tastes better warmed up the next day", she said to Papa Chef, who whole heartily agreed.

There was some carrot, onion and chili salad left over which was added to the toasted sandwich and egg, giving it that extra little sting. 😘 If you know what I mean.

Silver Mamma Chef closed her sandwich with the second slice of toast, mixing the flavors together.

The egg oozed all over the place, leaving Silver Mamma Chef with rather sticky fingers...Lol, she didn't mind at all, she just licked them with delight, enjoying her curried mince egg and salad sandwich. I mean... that's what a sandwich is all about, not so?
Silver Mamma Chef always said, "If one has no sticky fingers and food on your face after eating a good wholesome sandwich, then one hasn't enjoyed it".

Papa Chef was more refined and ate his sandwich with a knife and fork, and of course, "Mrs Ball's Chutney" and "Tomato Sauce", that's a "South African" thing, "Mrs Ball's Chutney" and "Tomato Sauce" is never missing in a South African household...well! one would always find it in Silver Mamma Chef's Kitchen anyway.

You know, she has it with everything, stews, braais she even cooks with it sometimes, her and Mrs Ball's Chutney have a very good relationship .Hehe!

I mean... Mrs Ball's Chutney has been going since 1917, and is totally adored by Silver Mamma Chef.

I tell you...Silver Mamma Chef would be completely and utterly lost with out Mrs Ball's Chutney in her Kitchen.

Awesome, that is definitely my kind of sandwiching here... BTW i love your egg-poacher, wasn't aware that exists. Hahaha!

The sandwich was rather a wee bit messy, but oozed with flavor. Lol!
