Hello dear food lovers 🍽️❤️ today I want to tell you about the preparation of a special arepa that I love and I have shared with some friends from Tenerife 🇮🇨 I had been absent for two weeks from the platform because my whole family caught a cold and we were terrible. Thank God today we are better and I am here to tell you about another of my experiences recreating dishes in my kitchen. I have experienced that many canaries love Venezuelan food, especially stuffed arepas. During a Management course I took at the end of the year 2021, while I had my baby in my tummy, I made good friendships which we have been in touch since day one we liked each other so much. When the class got boring, we used to get into a WhatsApp group we created and talk about food. I would show them pictures of the dishes I recreate at home and they were fascinated by the wide range of cuisine we enjoy.
The thing is that being Venezuelan, my friends have asked me how to prepare certain dishes. Since I like to cook, I had the opportunity to recreate several meals during the duration of my Management course and give them a taste of certain things. I have given them to taste the typical yellow rice with vegetables such as carrots, red bell pepper, corn and onion accompanied by pieces of sausage and chicken. They have also tasted tequeños, empanadas and scrambled egg with tomato and onion, our rich "perico". He liked all foods but arepa is definitely one of his favorite Venezuelan foods par excellence ❤️ They usually go to Venezuelan bars or fast food places to taste them, since it is not a very common dish on their tables.
At the beginning of November last year, my friends Rebeca and Cintia came to meet my son Maximiliano and I surprised them with some rich stuffed arepas that they love so much ❤️ They loved these stuffed arepas because they only know the ones filled with chicken salad with aioli (garlic cream), shredded beef and grated yellow gouda cheese. Below I'll break down for you the list of ingredients you need to recreate them.
Ingredientes / Ingredients 🍽️
✓ Medio kilo de harina de maíz (harina pan).
✓ Agua al gusto.
✓ Sal al gusto.
✓ 1 zanahoria grande.
✓ ¼ de col blanca pequeña.
✓ 4 cucharadas de mayonesa.
✓ 2 dientes de ajo.
✓ Perejil
✓ Chorizos asturianos (rojos) o de tu preferencia.
✓ Half a kilo of corn flour (bread flour).
✓ Water to taste.
✓ Salt to taste.
✓ 1 large carrot.
✓ ¼ small white cabbage.
✓ 4 tablespoons mayonnaise.
✓ 2 cloves garlic.
✓ Parsley.
✓ Chorizos asturianos (red) or your preference.
Preparación / Process 👩🏽🍳
First of all I must clarify that everyone prepares the dough for their arepas as they see fit. I put the water first, dilute the salt and then add the flour and knead very well until there are no lumps. But this time I did it the other way around to see how much flour I used. I reserved the dough to make the arepas last so they would be warm to serve.
Afterwards, I simmered the chorizos and then chopped them into medium thick slices. I set aside in a separate container.
Last but not least, I washed and disinfected the white cabbage with white wine vinegar. I let it drain well and proceeded to grate as I did with the carrots. I prepared a garlic sauce (aioli) with 4 tablespoons of mayonnaise, two cloves of garlic, a bunch of parsley leaves and salt to taste. I added it to the shredded salad and it was delicious. I would never have expected it.
I imagine you are wondering: Why did I prepare it this way and not just add mayonnaise? Well, my husband is from La Victoria - Aragua State and he told me some time ago that when he studied at the Universidad Central Venezuela in its extension in Maracay, at the bus terminal there was a food stand that sold very good empanadas and one of their sauces was made with garlic sauce and Russian salad.
So, to please tastes and palates, I developed this recipe in this way to vary the typical filling of an arepa and thus get out of the monotony of the week's meals. Besides, my guests enjoyed them very much. I hope you liked this preparation. Although it is quite different from what I usually write in my recipes, taking a different direction from time to time is not bad for us.

La verdad es que es bastante satisfactorio que a la gente de afuera les guste también nuestra gastronomía. Ellos me comentaban en ciertas ocasiones que su comida no es muy variado y agradecen que hayamos llegado y ampliemos la carta jeje

amiga aunque no fue preparada con la propia Harina pan, te quedó muy bien esa arepa, ademas que el relleno que elegiste se ve de un buenooo🤤🤤
Hola amiga. Es una harina de maíz de la marca hacendado, es una línea blanca de un supermercado muy reconocido acá en España. Me atrevo a decir que es mejor que la harina pan. La masa queda más suavecita... y bueno, el relleno fue algo espontáneo. Gracias por pasarte.
