Qurator's: Hive Top Chef! | Curry ~ Chicken Curry With Ladies Finger, Potatoes and Tomatoes

Hello Hiveans! Let's spice up our cooking this week with CURRY that's the theme of Qurator's HIVE Top Chef this week. And here is my Curry cooking to add that aroma and spiciness to the variety of flavors this week.

Chicken Curry With Ladies Finger, Potatoes and Tomatoes

Ingredients:

5 chicken drumsticks
5 Ladies finger
2 fresh red chillis cut into 2
2 potatoes ~ peel the skin and cut
1 tomato ~ slice into 4
3 tablespoons chicken curry powder
1 tablespoon chili paste
2 tablespoons red chili powder
1 tablespoon tamarind paste
4 stalks of curry leaves *
1-inch ginger ~ sliced
3 red onion ~ sliced
3 cloves garlic ~ sliced
1 cinnamon stick
3 star anise
2 cardamom
1 teaspoon salt
1 tablespoon sugar
250 ml of coconut milk
1 cup water
Cooking oil

Method

  1. Heat cooking oil and saute onion, garlic, and ginger until a little bit brownish.
  2. Add cinnamon stick, star anise, and cardamom and sauté until fragrant.
  3. Add curry leaves and sauté until fragrant.
  4. Add curry powder, chili powder, chili paste, and tamarind paste, and sauté for a while.
  5. Add the chicken and potatoes, mix well, and slow the fire.
  6. Add coconut milk and water and stir slowly. Leave to boil until potatoes are ready.
  7. When the chicken is tender, add the ladies finger, tomatoes, fresh red chilies, salt, sugar, and bring to boil until ladies fingers are ready.
  8. Chicken Curry with Ladies Finger, Potatoes and Tomatoes is ready to serve.

Looks so yummy sis! The decoration in the thumbnail looks creative. The ingredients picture too looks aesthetically pleasing. Your cooking method is similar to how we make it at home except for the coconut milk so maybe one day I will try with coconut milk like your recipe. By the way, may I know where did you buy the brown utensils used to keep the ingredients before cooking? They look so nice and I have been looking for them.

Hi @yashny, thank you for your kind comments, compliments and for visiting my page. Actually, adding coconut milk is a Malay curry cooking style. Yes please do try it maybe you will like it too. I actually bought sweet porridges (kheer) at the Khan Food Shop Chow Kit. The brown porcelain plate came with the kheer (see photo below). And because I love kheer so much and always bought them, so I made enough collections that I can use for my cooking and food photography, nice right :D

Oh I see! Will give coconut milk a try =) Wow I never thought it came with yummy kheer! It surely is nice and gives an elegant look to the meals. With right capturing the images look even professional. Thank you for sharing the information to me :)
