Qurator's: Hive Top Chef! | Ginger ~ Hainanese Chicken Rice

Hello Hiveans! This week's Qurator's HIVE Top Chef Theme is Ginger and let's see how many gingers I have crushed to make this week's dish 'Hainanese Chicken Rice'. To make this dish needs a lot of planning to ensure I meet all the required ingredients. A typical set of Hainanese Chicken Rice consists of Chicken Rice, Hainanese Chicken, Chicken Soup, Chilli Sauce and Soy Sauce. I am so happy to enjoy a good dinner with my family while also making a blog for HIVE Top Chef this week's challenge 'Ginger'.

Hainanese Chicken Rice

Ingredients

1 kg chicken
2½ cups rice
3 tablespoons chicken stock
1-inch ginger (sliced)
14 garlic cloves
2 onions
5 red chilies
4 birds eye chili
1 tbsp vinegar
2 teaspoons sugar
3 tablespoons soy sauce
1 tablespoon sesame oil
3 tablespoons vegetable oil
Salt (to taste)
Ice

Chicken preparation ~ Rub with salt and boil

  1. Clean and rub the chicken with salt. This method of rubbing the chicken with salt will make the chicken skin look shiny later.
  2. Rinse the chicken with water to remove excess salt.
  3. Place the chicken in a pot and add water until the chicken is completely inside the water.
  4. Cover the pot over medium heat, leave to boil for 1 hour.

Soak the chicken in ice

  1. After 1 hour of boiling the chicken, close the fire, and remove the chicken from the pot, leave the chicken stock for soup later.
  2. Place the ice in a bowl.
  3. Put the chicken in the ice and leave the chicken to soak in the ice for 10 minutes.
  4. Hainanese chicken is eaten in the way, the chicken is cold. Ice soaking can stop the cooking process and can retain the juice which gives a better texture to chicken skin.

Chicken is ready, garnish with spring onions

Chicken Soup preparations

  1. Slice onions and ginger. Add 1 cinnamon stick, star anise and cloves.
  2. Add to the boiling soup and leave to boil for 15 minutes.
  3. Soup is ready. Garnish with spring onions.

Chicken Rice preparations

  1. Crush ginger and garlic and add 1 tablespoon chicken stock. Mix well.
  2. Wash rice and add water to the right measurement.
  3. Add the ginger mixture.
  4. Add 1 tablespoon vegetable oil. Mix well.
  5. Add 1 teaspoon sall. Mix well.
  6. Cook rice to perfection.

Chicken Rice is ready, garnish with spring onions

Prepare the chili sauce

Using a blender, grind large red chilies, bird's eye chilies, 8 cloves garlic, 1-inch ginger, 2 tablespoons chicken stock, 1 tablespoon vinegar, 2 teaspoons sugar, and 4 tablespoons water.

Yes, I was thinking of doing a proper sit-down dinner for my family that we could all eat together and enjoy a great dinner and so happens that the theme was ginger and the Hainanese Chicken Rice which mostly use ginger as its main ingredients was a favorite of my family that I can cook and then we all enjoy our dinner happily together. cheers my friend, ainie

Thank you Max, so kind of you to visit my post. I want to tell you that the Pink Banana has ripened today. I ate it and it tasted so sweet not like a normal banana. The smell also not so strong as a normal banana. I am surprised how it tasted and smell. It's definitely a unique banana species.

WoW...They do really look pink and juicy i am glad you liked the taste and smell i found exactly the same thing when i first tasted them almost like they have a little vanilla taste in them well you might not be eating normal bananas anymore if you have them available and cheap over there 😊

Yes you are right, I now have a totally different change on my banana liking. This pink banana now is my favorite banana. Imagine I knew this only because I was helping you to find one, awesome right! Life's little surprises :D
