The Perfect Hangover Cure

I'm entering this tasty (and useful) recipe in Qurator's: Hive Top Chef! | Garlic! weekly contest. As you can see from the title of the contest post, the ingredient required for the recipe is garlic, which is something I use in almost everything!

This recipe is originally known as Shakshuka, which is basically just a dish made of eggs baked in a spicy tomato sauce. I was introduced to this "hangover cure" at a New Year's Day brunch a few years ago and I've made it several times since then. Not for the "hangover cure" properties, but just because we really love it!

The first thing is to fry chopped bacon until crispy then remove the bacon and store in paper towels so that it remains crispy for adding back in later. Retain the bacon fat in the skillet for the next step.

Add the chopped GARLIC, thyme, sweet paprika, cumin, and chili powder to the bacon fat and toss it together for a few minutes. Such a heavenly smell comes from the seasonings sizzling in the bacon leavings! And here's where you can customize the amount of "heat" you want in this dish. Tabasco or hot pepper could be added if you're a spicy 🌶 dish person. I'm rather a wimp in that regard. 😊

The next step is to add the chopped tomatoes and Clamato juice. I've used regular tomato juice and some beef broth if I didn't have the Clamato juice (which is tomato juice with clam juice) on hand, but I prefer the Clamato juice if it's available. You let this mixture simmer for at least 20 minutes for all the flavors to be absorbed.

Again, wonderful aromas while this is bubbling away! Next, you will crack six eggs into the mixture and add back the crispy bacon pieces before you slide the skillet into to oven. About seven minutes in a 350 Degrees F (190 C) gives me the perfect doneness to the eggs. You can adjust the time for the way you like your eggs done.

When the skillet comes out of the oven, it's time to dress it up for serving. Fresh chopped basil, a generous handful of peas, some chopped green onion, and a diced avocado finish things up. And of course, you can use your imagination here as well and add any other toppings you like.

This dish is perfectly suited to serving with crusty bread to dip into the delicious sauce.

To recap the ingredients:

  • 6 slices of bacon, cut into sections
  • 8 large garlic cloves, roughly chopped
  • 1 heaping teaspoon thyme leaves, fresh (or ½ teaspoon dry)
  • 2 teaspoons cumin, ground
  • 1 teaspoon sweet paprika, ground
  • 1 small red chili, deseeded and finely chopped or a healthy pinch of chili flakes (adjust for your tolerance of "heat")
  • 1 8 oz can crushed tomatoes or 2 large fresh tomatoes, chopped
  • 1 cup Clamato juice
  • Salt & pepper to taste
  • 6 eggs
  • fresh basil leaves
  • 1/2 cup peas
  • medium chopped avocado
  • 1/4 chopped green onion
