Salad with vegan creamy Caesar and vegan mushroom stroganof for food fight Friday

It's #foodfightfriday which is fitting for us because it's always a fight to make something to eat in my in-laws. We thought it was going to be a breeze when they went to the license bureau to get a plate. We know the line ups are going to be long so we would have time to fix lunch which was breakfast for us.

I started chopping and prepping in order to make a salad and mushroom stroganof for pasta.

For the salad I mixed lettuce that we had in the fridge with romaine from one of the two bunches in the garden. I picked a few herbs as well.

I got onions, garlic, and mushrooms washed and chopped than made the salad dressing.

This is when the door busted open and the two of them came in panting and riddled with anxiety because they couldn't find the place.

I cleaned up and packed up everything. We were going to eat salad at the park and forget about the pasta.

While I was packing up Marc's mother was yelling at her husband and swearing then crying. This is not an unusual scene but you would think that by the time you reached seventy five you would get past these issues.

We got the heck out and down the street to the local park where we ate our salad. We were super hungry and knew that soon after this we would need to eat again.

For the salad ingredients I put a pear which was from two weeks ago that wouldn't ripen. I added tomato,onion and clementine which were in the bargain bin at the local grocer. I added sultana raisins that were in the cupboard and I managed to cube some kumut bread and make croutons in under the broiler before all hell broke loose.

For the vegan Caesar dressing I ground up a small handful of cashews 3 cloves of garlic, 1/4 cup olive oil, 1/4 cup balsamic,1 tablespoon coconut yogurt, juice of lemon, salt and pepper. If I would have had nutritional yeast it would have gone in as well for an added boost. I can't get it nearby except for really expensive packages.

What makes this a vegan Caesar dressing? Me giving it that name.

After we ate the salad we were going to go somewhere and get some more food but we thought that since it was extremely hot his parents would very likely sit inside and watch television with the air conditioning. We would then go into the back yard and make the rest of the food outside instead of the kitchen where if we start something his mother would come in at that moment and start shuffling around like we are in the way.

When we got there at about four p.m. they were inside so we were relieved as we started to gather some of our ingredients to make food on the camping stove.
This is when the two of them got their drinks and went outside. We gave up on eating more and just had to endure the boredom of the two seniors sitting there. We have to listen to Marc's father tell the same stories and usually somewhere there is an insult to us being vegan. Somewhere also he describes beautiful cuts of pork in explicit detail.

We made jokes that we hadn't had breakfast yet even though we had the salad, and we wait for them to say that we should go to the kitchen and make food but instead we get a nod then more stories.

When his mother went to the bathroom Marc and I decided we should go to the store and get beer to help with the boredom. We thought we might as well get drunk if we can't eat.

We came back and guzzled waiting for them to go in a make there dinner which would be their third meal of pork in some form or another.

They just wouldn't go in. Finally we ran out of beer and we were frustrated and really hungry so we thought if we left to get more drinks they would go inside and finally make dinner. It was now seven p.m.

We came back and drank more. finally his father who never makes food went inside and made himself breaded fried brie but not for his wife.

She finally went inside so now we made a mad dash and got all of our stuff and put it on the patio table to make our dinner/breakfast.

As soon as we started the stove she came out with her glass of wine and saw us cooking so she sat on the other side of the yard. We felt bad and packed up once more and said we had to go to the store for something.

When we came back she was finally on the couch with Marc's dad.

At last we made our pasta starting with the onions and garlic.

Then we added the mushrooms and some herbs including dill, chives and a squeeze of lemon.

I also added a dollop of vegan yogurt and a tablespoon of flour along with a little water and 3 tablespoons of vegetable soup broth powder, I added salt, pepper.

We had it on rotini and more fresh herbs on top.

Normally it would have been appreciated with a glass of wine but there was no need for any more alcohol. We were quite half in the bag and extremely disgruntled.

But the pasta was good and worth the wait.
