Qurator's: Hive Top Chef! | Pineapples! - Tropical Pineapple Flan

To the left to the right jump up and down and to the knees
Come and dance every night sing with a hula melody...

Remember that fun infectious and very silly Pineapple song by Black Lace that made number two in the 1984 Top of the Pops and really got the party going?

I'm not sure how you push pineapple but I do know that one can make desserts,savoury dishes and cocktails with Pineapples, and here are just a couple of examples:

  • Upside down Pineapple Cake
  • Pineapple Cheesecake
  • Pineapple Fritters
  • Pineapple Sundae
  • Piña Colada
  • Pineapple Burger
  • Hawaiian Pizza
  • Sweet & Sour Pork or Chicken
  • Stir fries

I am sharing an old-fashioned Tropical Pineapple Flan bursting with flavour for this week's Qurator's: Hive Top Chef! | Pineapples!

The base is a light sponge cake baked in a special flan pan to produce a tart shape, filled with a fruity Custard & Pineapple filling and topped with whipped cream rosettes, this really is delicious!

Basic Flan Recipe

  • 125g Butter at room temperature
  • 125ml Castor Sugar
  • 2 Eggs
  • 300ml Cake Wheat Flour
  • 2ml Salt
  • 7ml Baking Powder
    Cream Butter & sugar, add eggs & beat well.
    Sift dry ingredients together & add to creamed mixture.
    Spoon into sprayed and floured flan pan, bake in 180°C oven for 20-25 min.
    Turn out carefully and cool on wire cake rack.

Pineapple Filling

  • 1 Pineapple grated
  • 100ml Sugar
  • 125ml Water
  • 2 Tbsp Custard Powder

Bring Pineapple, sugar & water to the boil, simmer for approx 2 minutes.
Mix Custard Powder with a little extra water till smooth & add to fruit mix, bring to boil again till it thickens.
Leave to cool before spooning into flan.

Pipe whipped Cream on top and garnish with Lavender flowers. (Glace Cherries, fresh Berries or Orange Rind also look great.)

Such a silly song not so but quite fun 🎵
I'm sure you also remember how popular Flans used to be, funny how food trends come and go. I'd forgotten just how nice they are!
