Qurator's: Hive Top Chef! | Pumpkin! - Tempting Pumpkin Fritters

Pumpkin is a wonderfully versatile vegetable that plays a dual role as it can be served as a healthy vegetable but can also be turned into desserts and baked goods; think of Pumpkin Pie, Breads, Muffins, Fritters, Soup, Casseroles and Baked Pumpkin.

I have made an old South African favourite, Pumpkin Fritters, dusted with a Cinnamon Sugar mix.

Low Carb Pumpkin is a great choice as a winter vegetable for those watching their weight; of course not as a sweet treat like these pumpkin fritters :)
Pumpkin further is packed with dietary fibre, Vitamins A, B6 and C, as well as Manganese and Folate, plus has the added benefit of being a great anti-oxidant.

There are many variants being grown by farmers worldwide, but the ones in the image above are Butternut Squash, Hubbard Squash, Hokkaido Pumpkin and Green striped Cushaw Squash.
All these have brilliant orange flesh and is delicious baked in the oven or added to baked goods.

I used Butternut Squash for my delicious Pumpkin Fritters today.

FUSS-FREE RECIPE

  • 2 cups mashed cooked Butternut or other Pumpkin, well-drained
  • 1/2 cup Self-Raising Flour
  • 1 Egg

Mix all together, drop by the spoonful in shallow oil and fry till golden brown on both sides.
Drain on paper towel and roll in a Cinnamon and Sugar mix.

Absolutely nothing beats fresh batch pumpkin fritters and a coffee for breakfast, you really make me hungry just seeing these!

Lovely easy recipe for me to remember hopefully get the fritters going, my Mom used to make them all the time @lizelle

They're so easy to make, don't know why I don't make them more often as we all love it! I dust hubby's with sweeteners instead of sugar!
