I must admit that as much as I love cooking and preparing food - as the year wears on it can get a little long in the tooth trying to continue being creative and coming up with fresh ideas... but then, the Summer sun comes out to play and you go on holiday and suddenly you are full of creative vibes again! haha!
Since arriving at my dads place, the weather has really been amazing - apart from one or two days of drizzling... so needless to say that a good 80% of our meals have been prepared over the open flame outside.
Summer salads are so much fun to prepare (in my opinion) - and there is absolutely ZERO reason for them to be boring! Far too many people think of salad and get that generic "greek salad" pic in their mind, when in truth... salads can be really fun!
So on one of the many days recently where we had a braai, I decided to put together three very simple, but absolutely delicious salads.
The first one was a simple trio - cooked beetroot, goats feta cheese and crumbled pecan nuts. The second (middle) was a combo of blanched fine green beans and broccoli with a creamy blue cheese dressing and sprouts. Then, last but DEFINITELY not least was halved baby tomatoes, baby spinach leaves, mozzarella cheese cubes and my favourite... basil pesto!
They were ALL amazing but I have to say that I think the beetroot one was actually my favourite, despite my love for basil pesto, haha! On the braai we also decided to do something a little bit les conventional and did strictly chicken kebabs, dressed three different ways - honey & mustard, Red wine and rosemary, and Sweet chilli... and then traditional pork BBQ ribs!
With the bellies full... it was time to make a splash and swim some of it off! haha!

Salads are so much more interesting in summer months always learning new ones as one goes along, braai is best being outdoors goes without saying.
I could not agree more! Actually, they make a refreshing change from the "warm foods" selections we have to work with lol. Xxx
