A Plate of Beefy Goodness - Philippine Food "Beef Pares"

Welcome to another taste of Philippine food. Today I have prepared for you a dish that has become popular in the streets. A dish called Beef Pares. There are actually two versions which is the original and the street version. The street version is a cheap way to get filled up but involves beef flavor enhancers. Our home made version today would not require flavor enhancers. I have also included a recipe for chili oil which is perfect for this dish.

For this recipe any beef cuts would do. I also included beef bones to maximize the beef flavor of the broth.

As always I love cooking outside. It saves propane and helps me get rid of wood scraps at home.

The beef is boiled for 2-3 hours to soften up the meat.

Ingredients:

  • Garlic
  • Ginger
  • Onion
  • Star Anise
  • Spring Onion
  • Chili
  • Salt
  • Brown Sugar
  • Corn Starch

Once the beef has softened, cut them up in pieces.

Sautee the garlic, ginger and onion until soft.

Mix in the beef.

Add about two laddles of soy sauce.

Pour in the beef broth.

Add the Star Anise, salt and brown sugar.

Cover and allow to boil.

As a thickener, mix the corn starch with about two table spoons of water.

Add the dissolved corn starch and mix well.

Once the sauce is thick enough, add the spring onions and cover the pot.

For the chili oil ingredients:

  • Chili
  • Garlic
  • Star Anise
  • Salt
  • Sugar
  • Oil

Crush all the ingredients together and mix well.

Cook everything in a pan until golden brown. Be careful as can easily get burnt.

Grab a plate with some rice and enjoy the beefy goodness of Beef Pares.

To spice things up, scoop in a tablespoon of our chili oil.
