Nature takes them back, animals will eat them! We humans don't have to have everything for us that grows. Of course, I would collect and use some, but also share a lot with the rest of the animal world.
In some places there are just so many apples that can hardly be used. It would be nice if everyone could / would collect some, but some trees are also private and there is even trouble π¬π
I think the idea with the ribbons on the trees is great. So everyone knows where to pick.

Most apple trees are in private orchards, so you can't just take them with you. On https://mundraub.org there is however a map where trees are on public land and can be harvested by anyone.
It's a pity that not all owners of the orchards pick up the apples and deliver them to local points of collection for further processing.
You won't get rich from this, but if you have a few trees you can have a nice dinner in a restaurant from that.
Sharing it with the animals is of course also an approach, but most of it will simply rot.
It is tedious work to collect them and drive them to the collection point. It's good for wildlife, but as you said many will rot.
