Hablaba ese diletante padre del voraz Gargantúa, François Rabelais, del vino que hace buen latín: ese que te lleva en volandas por los paraísos vedados a la vergüenza y cuando se despide de ti a la mañana siguiente no te deja quebrantos en el alma, como dice la canción que ocurre cuando un amigo se va.

Posiblemente, ese fuera el tipo de vino -culto en aromas y lo suficientemente consistente como para poner en posición de firmes a la pluma más templada- que lo más granado de las letras españolas, podríamos decir que contemporáneas, libó con afición en las circunspectas candilejas de unas tabernas, que generalmente -nobleza obliga- terminaron dejando huellas en sus libros más populares.

Sería el caso, por ejemplo, del excelso cronista de nuestros desdichados Episodios Nacionales e inveterado amante de los gatos -según consta en una fotografía de la época, elevada a la categoría de póster, que cualquiera puede ver en el soportal donde se asienta la popular chocolatería San Ginés, en cuyo interior terminaba saliendo por los cerros de Úbeda, como se suele decir, con otro monstruo de las letras llamado don Ramón María del Valle Inclán, a cuyo bohemio personaje, Max Estrella, todavía se le recuerda con cariño en la Casa Ciriaco- don Benito Pérez Galdós, con ésta taberna que les presento, digna superviviente de diluvios, si no universales sí al menos históricos, que todavía conserva el nombre de una de sus novelas más conocidas, donde se enorgullece de participar: La Fontana de Oro.
