The past few weeks life has been very hectic. While most of you are in lockdown, our pop-up, mobile tuk-tuk bakery has been running at full speed. Now more then ever people are relying on staple foods - such as bread - that can easily be picked up or delivered and enjoyed at home.

Long working days combined with the extreme heat have kept me away from my computer. After coming home, taking a shower, and cooking for my hubby and myself, I didnโ€™t feel like doing a lot more.

Also, constantly having the wear a mouth mask while temperatures are around 40C or 104F and humidity is around 60 to 70% is very tiring. Believe me.

In Cambodia, however, corona doesnโ€™t seem to strike that hard compared to my home country Belgium and many other countries across the world. According to some scientists, we have this extreme heat to thank for the low infection rate (122 reported cases and no deaths reported so far).

QUINOA CASSEROLE WITH PARSLEY CAULIFLOWER CASHEW CHEESE SAUCE

INGREDIENTS (SERVES 3-4)


  • 1 cup carrot, chopped
  • 1 cup eggplant, chopped
  • 1 cup zucchini, chopped
  • 1.5 cups cooked chickpeas
  • 1 cup uncooked quinoa
  • Himalayan pink salt and black pepper to taste

For the parsley cauliflower cashew cheese sauce


  • 2 cups cauliflower florets
  • 1 cup fresh parsley
  • ยผ to โ…“ cup raw cashews
  • ยผ cup nutritional yeast
  • 3 cloves of garlic, peeled
  • Himalayan pink salt and black pepper to taste
  • Ground nutmeg to taste
  • ยฝ tsp turmeric powder

INSTRUCTIONS


Preheat oven to 200c or 400F.

Cook quinoa according to the instructions on the package.

Add carrot, eggplant, zucchini, and chickpeas to a baking sheet. Drizzle with cooking oil and season with black pepper to taste. Roast until the veggies are slightly browned and cooked through.

Meanwhile, boil cauliflower, garlic cloves, and cashews in water. When cooked, drain and blend with the fresh parsley, nutritional yeast, turmeric, nutmeg, Himalayan pink salt, and black pepper.

In an oven-safe dish, combine the cooked quinoa and roasted veggies. Season with salt and pepper to taste. Top the mixture with the cashew cauliflower cheese sauce.

Cook in the oven for 10 to 15 minutes or until the sauce layer starts to brown.

That sounds rough indeed and like extreme measures for a country where there's apparently hardly any casualties. I haven't worn a mouth cap for a minute yet ( here in The Netherlands ) but they will probably be recommended - in certain public places - from June onwards.

I hope you can find the time every now and then to share your delicious recipes.

I am sure numbers are not correct for Cambodia. People don't go to the doctor here. Many people in the countryside get sick or just die without any questions asked. Though I am pretty sure it is not so bad since we do not have a lot of elderly people here (the average age is 24 years old, many have been murdered during the Khmer Rouge regime), the numbers should be a little higher I think.

Also, the mouth mask is not mandatory but it is to make my Cambodian customers more comfortable. They strongly believe the virus comes from westerners!

I am reading this post at 6.52pm on Mothers Day after a 24 hour fast. LOL I'm drooling!!!

Funnily enough one of my cancer clients was asking about quinoa recipes the other day - he's needing to do NO wheat-rice etc and is late stage pancreatic cancer.. Do you happen to know how digestible quinoa is for a late stage cancer client with liver issues? He's a conservative eater and I'm looking for things I can teach his Thai gf to make.

As for your client, grains like quinoa, amaranth, and buckwheat are easier to digest than gluten-containing grains. And they can be used in the same way as rice. Fried quinoa instead of fried rice is so good. Also, buckwheat noodles or soba is a good substitute for rice or wheat noodles. However, I do not have experience treating people with late-stage cancer.
