Coconut Cranberry Oat Health Bars - For Convalesvence & Energy - Sugar & Dairy Free, Vegan.

Wanting healthier snack options? Whether you're on a special diet after surgery or chemotherapy, avoiding sugar due to candida or cancer, convalescing or just wanting cleaner vegan food, these simple health bars are beginner level in terms of kitchen skills, super yummy, gentle on the gut & totally guilt free.

My make-it-up-as-you-go recipe used:

300g FRESH (moist) descicated coconut meat
300g organic rolled oats
5 ripe bananas
Organic cinnamon 1 teaspoon
2 BIG handfuls of dried cranberries
Extra virgin cold pressed organic coconut oil - about 1/4 cup
2 tablespoons water

The only equipment I used was a stainless steel mixing bowl, a fork, wooden spoon, stainless steel spatula, a square slice tin & some baking paper.

I baked them at 180C for 40 mins. My "recipe" made 25 square bars.

This is a GREAT way to help picky eaters or people with allergies, or simply to make sure snacking is healthful & helps optimize energy.

Oh my... hungry now. Don't have cranberries but goji or mulberries will have to do. I love fresh coconut in cakes and bars... so good!

I've neer seen dried mulberries here - do you have them in Cambodia? The fresh ones will be in season again soon, and yup, that's a GREAT option!!!

Definitely a must try as I find all the sugar laden treats no longer agree with me, brings on the GERD in an instant! Plus this would make a good treat for my diabetic hubby when he's having a hypoglycemic reaction!
