Baked Falafels Salad

I will assume that much of the world knows about falafels. This is a popular middle eastern dish made of chickpeas.
Even in the western world they have become very popular, and although they are plant based, they are enjoyed by non vegans as well.

I have had many falafels in my long life, however they were all fried. Not just fried, but in a deep oil fryer.

We all know that things that go in a deep fryer are delicious. They just are not a healthy thing to consume regularly. I have made falafels today in the oven. They were just brushed with olive oil.

Falafel mix

2 cups dried chickpeas soaked over night
1 cup fresh parsley
1/2 cup fresh cilantro
5 or 6 garlic cloves, peeled
1 tbsp ground black pepper
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp baking soda
Salt to taste

I soaked the chickpeas longer than I intended to. It was for 2 days instead of overnight. After I added them to a food processor to grind with the other items. If you are using a blender you may have to add water but don't add more than you need to. I did have to add water. It was quite moist at the end which was good. I was baking it and not frying it which will make it more dry inside so keeping a fairly wet mix was ideal.

It was not too wet to shape into balls. I actually shaped it more like a football.DSC_4843.jpg

If you are not opposed to frying, then you could put them in a pan of oil and brown them first. I wasn't about to do that this time. I was keeping it light of oil so with a pastry brush I brushed the underside of a baking tray and all around the falafels.

Put the falafels in a preheated oven on 350 degrees F. and leave for ten minutes then check to see if they are firm and a little brown. I left them in longer changing them to a higher oven rack. When they are golden on the underside and fairly firm they are done.

Normally they are served with a sauce made from tahini, which I love, however I didn't have any.

Creamy garlic sauce

2 cup soaked cashews
2 or 3 cloves garlic
Juice of 1 lemon
1 teaspoon pepper
salt to taste

I didn't serve them with a pita as they usually are. Instead I turned this into a salad plate. It was a bread free week.

Falafels are often served with pickled turnips which is really nice in a falafel sandwich.
