Hello hello NM community... Another week with a sweet treat here.... Santiago can now eat citrus fruits Yippee! so I made him a lemon cake
I made the original recipe one December at Christmas, and it had three creams in it, but honestly I still don't know how to make condensed milk with liquid soy milk, if anyone knows I'd appreciate it.
So I only made the cake for him to taste the lemon, the reality is that he only ate half of it, the rest was stolen by the adults in the house and I will have to make another snack for Santiago.
I go with the recipe
Ingredients:
Half a cambur
One lemon
Corn starch
Wheat flour
Oat milk
Soy margarine
Preparation:
- First squeeze the lemons and grate the peel, only the colored part, because the white part is bitter.
- Then in a bowl add the cambur and mash it, when it is pure add the oat milk and the margarine, stir well until it is uniform.
- In another bowl mix the corn starch and the wheat flour.
- Now add the previous mixture to the mixture of the cambur, mix well and add the juice of half a lemon.
- When you have a homogeneous mixture, add the lemon zest and you have your mixture.
- Pour it into a floured mold so that it does not stick when unmolded.
- Bake it for 15 minutes at 180°C and it's ready.
The softest cake you have ever eaten

Hi @kyleana Yes, this recipe looks so subtle to combine the banana and the lemon, it would not have happened to me, it is a great recipe, please prepare this cake again, invite me, surely I will leave a little more than half to Santiago
Yes, the cambur is ideal for sweetening, as he is small I don't give him sugar. Although we are really implementing this regimen at home, panela is also an option but I haven't bought it hahaha... Hahaha if you leave him more than half I invite you, haha because otherwise I have to make double snack.
