Greetings all, @JustinParke here with another Plant Power curation, featuring a selection of delicious #plantbased recipes and more to share with you all.

☕ A Delicious Week 🍛

     Whether slow-cooked or stir-fried, boiled or baked, there is a lot of variety in this week's curation. I didn't find any sweet things this week, but what I did find didn't make me regret the lack of desserts. I even learned something about acorns I had always wondered but never investigated.

     Every week I am always amazed by the talent of our #plantbased chefs, and I always feel culinarily inspired after putting together a Plant Power curation. Much love to all of from here in Paramaribo, Suriname.

     The winner of this week's beneficiary is @jasonliberty, for the manual labor he put in while crushing a heap of acorns.

Acorns as a Free Food Source: How to Make Acorn Meal/Flour

     Growing up in the midwestern USA, I must say I all too familiar with acorns, but I mostly used them as weapons to destroy my brothers and sisters. The adults had always told me they were "poisonous", but this was before the days of being able to google stuff with little effort. Well, it turns out they were partially right.

     Apparently the problem is the tannins, which create extreme bitterness, and therefore probably caused many folks through the ages to consider these things inedible. Well, this post will show you how to get the tannins out and make your own acorn flour, but be ready for a little manual labor.

Vegan Malai kofta and some talk of spuds

     Cabbage koftas have long been a family favorite in my house, but there are so many varieties of these delicious savory meatball-esque Indian delights. Malai kofta is a version that normally contains paneer (Indian cheese), so it's not one I've ever eaten nor attempted to veganize, although tofu is a pretty acceptable paneer substitute in most culinary cases.

     As usual, this chef hit it out of the park with her recipe and presentation. I'm a bit of a sucker for a story too, and there's a little one in here too. My only recommendation for novice kofta eaters is to prepare a napping space nearby, because you will likely overeat and suffer the consequences. They are just too darn delicious!!

Easy Low Carb: Slow Cooker Vegan Black Beans

     Slow-cookers, or "Crock-Pots" as anyone from the USA might call these things, are well-suited for cooking beans. The bean dish she shares with us in this post is one she makes often, and it's low-carb if any of you happen to be following that kind of diet.This recipe is simple and presented with very easy-to-follow instructions, as well as serving suggestions.

🥦 Sweet & Sour Mixed Vegetable Stir-Fry 🍅 An Ital Khmer Recipe 💚💛❤️

     This Cambodian Ital chef knows her flavors, and this sweet and sour stir-fry is much better than any version I've had at any restaurant in all of Cambodia. Yes, I actually get to eat this chef's creations, unlike all the other delicious posts I curate and drool over.

     In an homage to Suriname, she's included tempeh in this recipe, something not very easy to find in Cambodia, where tofu and bean curd skin are much more common. The broccoli is what makes this dish pop, and it's not an easy vegetable to get your hands on in Suriname, but a little adversity never hindered this chef.

A tea party with no "Tea", but had a variety of amazing herbal healthy tea!

     "What? An Indian tea party without proper black tea?" No worries because there were plenty of herbal teas to try at this gathering. From mango blossoms to moringa and more, there were some common herbal teas in this post as well as some that surprised me.

     Everything was presented beautifully, and the social activity there also looks like something I miss very much. If you read this post, you'll see that some teas have a bit of salt in them, and that is something I encountered for the first time in India. A wee bit of salt can make the flavors more pronounced, and this is the same way it's used in food, so it makes sense.

Love Challenge | Lasagna made from scratch

     If Garfield had access to this chef's kitchen, this lasagna would be gone in one bite. While vegetarian lasagnas are quite common, a vegan one is a bit tricker, because the cheese is kind of what completes a good lasagna, and that has always prevented me from tinkering with a vegan version, and the lack of an oven for the last 17 years, but I digress.

     This recipe looks delicious, and the lack of cheese problem is solved with some nutritional yeast a and a #plantbased version of a sauce not Italian in origin. If you want to know how she pulled it off, I recommend you pay this post a visit.
