Strawberry Mint Chia Jam ( no cook ) - best tasting medicine

Hello everyone
Today I am sharing a delicious no cook recipe for strawberry mint chia jam. It has no extra sweetening - just the natural sweetness of the strawberries.

This is a great example of good health through good food. Organic and or home grown food is the best natural medicine there is.

Chia is a great source of calcium for strong healthy bones
In the ancient Mayan culture the word chia actually means strength.
Chia seeds are rich in vitamins C A E and B. They are high in antioxidants too that reduce levels of free radicals in the body. Studies also show them to be hog in omega 3 fatty acids, the health benefits of which are well documented.

The mint adds extra yummy medicine to the mix being great for digestion, improving brain function, relieving irritable bowel syndrome and much more.

Strawberries are packed with vitamins and anti oxidants too. They help lower that blood pressure and protect against cancer.

So this no cook recipe could not be more simple.

INGREDIENTS.....

2 cups diced strawberries
3 tablespoons lemon juice
2 tablespoons chopped fresh mint
Quarter cup chia seeds
One quarter cup Apple juice

Extra 2.5 cups chopped strawberries

Simply liquidise the first 5 ingredients and then add the extra 1.5 cups diced strawberries to maintain chunkiness to finished jam.

Refreshing and delicious I know you will agree. Keeps in the fridge for two weeks. I may freeze some to eat on hot days like a sorbet too. ❤️

Damn - that looks AWESOME! YUMMO. All of that is in season now, in Thailand. Only we almost never eat jam. Am I right in thinking this would be an awesome nutritional smoothie base? With coconut milk? I'm thinking maybe I could do the same with lychees?

Oh yes with a splash of apple juice you have an incredible smoothie

How about a splash of pineapple juice instead? the apples now are last season's and not great.
