Ginisang Pancit Canton - An All-seaon Favorite Noodle Dish in my Country

Greetings!

When I was young I can still clearly remember that there are adults eating some noodle dishes heartily especially when some drops of calamansi lime juice are added to the dish. They said that adding some drops of calamansi lime juice to the dish makes the taste of the dish even better.

One of the dishes that adults in my childhood love to add some drops of calamansi lime juice is the Pancit Canton. Pancit Canton is a very versatile dish. You can cook it with or without soup. You can eat it on its own or you can partner it with rice. It can be cooked all season long.

Pancit Canton is also a dish that you can cook without the need of adding any type of vegetables like Chayote, Baguio Beans, Cabbange, or Snow Cabbage. All it needed is its ingredients and it will be fine.

When I was young I am not fond of Pancit Canton. I do not want to taste the Pancit Canton at all back then because I thought that it is not delicious. But as I get old I started to like it and now it is one of my favorites.

Just like any other dish that I have shared this dish also comes with many variants. There is a variant when Baguio Beans are the only vegetable that is being added. There is a variant that only cabbage is added. There is a variant the only snow cabbage is added. There is a variant that only Chayote is added. There is a variant that no vegetable is added at all. There is a variant that has no soup and of course, there is a variant that has soup.

The variant that I am going to cook today is the one with Chayote and with soup. I added soup because it is what my elder sister wanted to eat. And since it is raining, it is perfect for Pancit Canton.

By the way, I am cooking this for our dinner tonight. And just like I said earlier you can cook this dish any time of the day all year long.

So, without further ado here's how I cook this very versatile and very delicious dish...

  • Pancit Canton noodles (500 grams)
  • Garlic
  • Soy sauce
  • Onion
  • Chayote
  • Ground black pepper
  • Salt
  • Cooking oil

Peel and slice the chayote into strips

Peel and slice the garlic

Peel and slice the onion

Prepare the pancit canton noodles

1. Sautee the onion and the garlic in cooking oil

2. Add 500 ml of water and add the ground black pepper (Note: Adding more water is optional. Since this dish can be cooked with less water or more water you can choose to add more water or less)

3. Add the soy sauce and let it boil, set the flame into high

4. When it starts to boil add the pancit canton noodles

5. Add the chayote strips, add some salt. Be careful in adding salt because the soy sauce is already salty, if it becomes salty you are not going to appreciate the deliciousness of this dish, so, be careful in adding salt.

6. Stir and let it boil

7. When the pancit canton noodles are cooked it is done, Serve while it is hot (optionally, you can squeeze some calamansi lime juice into the dish)
