I wanted to make elderflower syrup. elderflower just grows in the roadside and you can pick it freely. You have to make sure that no dog has done a pee against it, of course. I thought it would be super tasty but it really wasn’t. You had to put orange and lemon in it but I didn't like it. Maybe I had pieces with dog pee who knows!

Prep time: 10 minutes
Cooking time: 10 minutes
INGREDIENTS:
elderflower screens (many)
1250 grams of sugar per liter
20 grams of citric acid per liter or lemons
After experimenting, testing and tasting I have finally found the tastiest and easiest recipe for elderflower syrup. Try to make it in large quantities because it can be stored well and it is delicious. So a large stock is finished in no time.
Pick the elderflower screens in the morning on a dry day. Shake them out for the insects that may be in them. Only use screens with beautiful fresh blossoms from which all flowers have emerged. Place as many stemless screens as possible in a large pot or bucket with a lid.
Flood the screens with enough water that they are submerged, but not much more. This way you ensure that you get a concentrated taste and that is what you want to achieve. A cocktail elderflower and spring in your glass! Now put the lid on and let this mixture stand for 1 day in a cool place in your house. You can also leave it a little longer, but don't overdo it. ( I did 10 hours and fridge )
Now pour everything through a large colander so that you only have the liquid left. There are still many impurities in it. Strain it again and then pour it through a sieve cloth. This way you get a nice transparent liquid. You just never get it completely clear because there is always some fine pollen left in the water. That doesn't matter, it just shows that you made your syrup all by yourself.
( all was sticky and because I made so much I needed 3 empty bottles of Coca Cola )
Measure the amount of liquid and put it in a large saucepan. Now add 1250 grams of sugar per liter and heat it until it just stops boiling. Stir until the sugar has dissolved, depending on the amount you are sweet for about 10 minutes. Stir in the citric acid until dissolved. This is available at an old-fashioned drugstore. You can also make this syrup without citric acid. Citric acid provides a fresh taste and a long shelf life. For a fresher taste, you can also boil lemon juice and zest and remove it before filling the bottles. This syrup also has a shelf life without citric acid, but it is shorter.
Elderflower syrup in bottlesClean bottles well in advance with boiling water. Now fill the bottles hot. Close them properly immediately after filling. For example with the handy rubber caps in the photo or simply with a screw cap or cork. As you can see in the picture I definitely didn't have enough bottles so I even had to fill jars. This monster stock came from a big bucket. So within half an hour you can pick a harvest of elderflower from which you can make liters of syrup.
Many readers have given tips to make their own syrup even tastier or more special. So try making elderflower syrup yourself with, for example:
petals such as: rose petals, daisies, violets
spices such as: ginger, cinnamon, anise, juniper berries
( maybe I will try this one because I love ginger and cinnamon. I learned that the sweetness is not always what I prefer. And that’s weird for a suger junkie like me ! )
other fruits such as: gooseberry or strawberry
( strawberry is nice to try aswell , but I have to go and pick new elderflower again tomorrow )
Well my experiment was not a good one. Maybe I will try it again. Or buy some first to see what I need to get as an outcome.

When in the UK I tried an elderflower drink for the first time (dog pee free) and really liked it. It was elderflower and tonic water and seemed quite refreshing, although loaded with sugar I guess. That put it on my radar and I looked for it down here in Australia and managed to find it. I don't drink it much but sometimes I do and I find it quite acceptable.
Anyway, that's my contribution to your post for what it's worth.

This recipe is very good, because you add citrus fruits that contrast very well with the mild flavor of the elderberry. I remember that my aunt always got nice bouquets of elderberry and put them to dry to store the flowers in glass jars. Then she made tea with them and added some chamomile, cinnamon, lemon and honey, it was delicious and very good for the flu. Interesting post. Greetings.
