Pasta con deliciosa salsa tipo italiana - Pasta with delicious Italian sauce



Un cordial saludo amigos (as) , esperando que estén bien.


Esta receta que traje hoy la comemos desde que éramos niños, pero la preparaba mi hermana mayor, mientras a la par estudiaba un curso de cocina que para ese entonces dictaban en el pueblito donde vivíamos...

Ingredientes:



_ 200 gramos de carne molida de res.
_ 200 gramos de carne molida de cerdo.
_ 1/2 kilo de tomates maduros.
_ 1 cebolla grande lavada y pelada.
_ 1 zanahoria grande bien lavada.
_ 4 dientes de ajo.
_ 1/2 cucharadita de comino.
_ 2 cucharadas de pasta de tomate.
_ 100 gramos de queso parmesano rallado.
_ 3 cucharadas de aceite.
_ 6 hojas de albahaca.
_ Sal y pimienta al gusto.
_ 400 gramos de pasta de tu preferencia, en mi caso vermichelli.

Ingredients:


_ 200 grams of ground beef.

_ 1/2 kilo of ripe tomatoes.
_ 1 large onion washed and peeled.
_ 1 large carrot well washed.
_ 4 cloves of garlic.
_ 1/2 teaspoon of cumin.
_ 2 tablespoons of tomato paste.
_ 100 grams of grated Parmesan cheese.
_ 3 oil tablespoons.
_ 6 basil leaves.
_ Salt and pepper to taste.
_ 400 grams of pasta of your choice, in my case vermichelli.

Preparación:



Corto la zanahoria y cebolla en trozos y los coloco en una olla con agua junto con los tomates y ajos ( enteros) y tres hojitas de albahaca, llevo al fuego, hasta que la zanahoria ablande, todo debe hervir, los tomates quedan bien arrugaditos. Dejo enfriar, quito la piel de los tomates y licúo con un poco del agua de cocción que no quede tan líquido, reservo.

Preparation:
I cut the carrot and onion into pieces and place them in a pot with water together with the tomatoes and garlic (whole) and three basil leaves, I bring to the fire, until the carrot softens, everything should boil, the tomatoes are good wrinkled. Let it cool, remove the skin from the tomatoes and blend with a little of the cooking water that is not so liquid, I reserve.

En otra olla pongo el aceite, las carnes, el comino, sal y pimienta. Desmenuzo bien para que no se formen pelotitas, sofrío muy bien hasta dejarla dorada y sequita, en éste punto agrego la salsa ( licuado), la pasta de tomate y las hojitas restantes de albahaca, tapo y dejo hervir a fuego bajo siempre observando el espesor de la salsa, rectificas sal y pimienta... ¡Listo, salsa preparada!

In another pot I put the oil, the meats, the cumin, salt and pepper. I crumble well so that small balls do not form, I fry very well until it is golden and dry, at this point I add the sauce (liquefied), the tomato paste and the remaining basil leaves, cover and let it boil over low heat always observing the thickness of the sauce, rectify salt and pepper ... Done, sauce ready!

Para la pasta: como haces normalmente, pones el agua al fuego, cuando hierve pones la sal y la pasta, dejas cocinar, cuelas.

For the pasta: as you normally do, you put the water on the fire, when it boils you put the salt and the pasta, you let it cook, you strain.

Sirvo las porciones de pasta y encima una buena dosis ( jajajaja) de ésta deliciosa salsa y completo con queso parmesano rallado encima, ¡uhmm!
