Ingredients

-400 grams of sugar
-180 millilitres of lemon juice
-4 whole eggs and one yolk
-50 grams of margarine
-Lemon zest (optional)

Preparation

The 180 millilitres of lemon juice were placed in a saucepan with the sugar and brought to a boil over medium heat. Remove from the heat and allow to cool, then add the beaten eggs, mix and bring back to a low heat, continuing to beat with a whisk.

This mixture will begin to wait, and to rise in volume so it is very important not to stop beating, after about 5 minutes after it has come to the boil, remove from the heat and add the 50 grams of margarine and the grated lemon rind to taste, incorporate well and place in a container with a lid.

This cream is now ready to be used as a filling for cakes, biscuits or bread.

Los 180 mililitros de jugo de limón se colocaron en una cacerola con el azúcar y se llevaron a ebullición a fuego medio. Retirar del fuego y dejar enfriar, luego agregar los huevos batidos, mezclar y llevar a fuego lento, sin dejar de batir con un batidor.
