Polpettone ( Italian Meatloaf )

Polpettone is a traditional Italian dish. It is a modified preparation of the rustic meatballs of the Middle Ages that were given resistance by adding breadcrumbs. In Europe, there are many versions of minced meat rolls, but in Italy, it is called "polpettone" derived from the word "Polpetta" which means meatball.

Nowadays we can prepare "polpettone" with ground meat instead of minced meat. Some variants mix pork and beef, or beef and chicken. There are also those with beef only. This meat roll can also be stuffed with cooked vegetables or boiled eggs. Today we will prepare it without stuffing in nápole sauce.

Ingredients

1 pound of ground beef
1/2 red bell pepper finely diced
1 small onion chopped into fine cubes
2 tablespoons finely chopped capers
1/2 cup bread crumbs
3 tablespoons of stuffed green olives
2 eggs
1 tablespoon olive oil
salt and pepper to taste


Yields 6 servings

Finely chop all the vegetables. Place the meat in a bowl, and add the vegetables and the eggs. Mix all the ingredients.

Add the bread crumbs. Some people like to soak bread crumbs in milk. I preferred not to do this because I didn't want the polpettone to be too firm. Add the olive oil, salt, and pepper. Mix well until a homogeneous dough is formed.

Cut a rectangle of waxed paper and place it on the counter. Take portions of the mixture and spread them on the paper. Try to form a rectangle half a centimeter thick.

Carefully roll into a compact cylinder. Close the ends tightly. Place the roll on a non-stick baking sheet and bake for 1 hour at 180ºC. Remove from the oven and let cool.

Remove the waxed paper and cut portions of approximately 2 centimeters.

To moisten the meat and make a delicious contrast of flavors you can heat it in neapolitan sauce.

This Polpettone can be served with pasta. It is also delicious with mashed potatoes. This is a recipe that you can prepare several days in advance and refrigerate it. When it's time to eat, it's just a matter of heating and serving.
