Coconut rice is a staple food in Nigeria and if I'm not mistaken it is been consumed at least twice in a week by an average Nigerian. The style we adopt in preparing coconut rice varies. I have adopted the style I learnt from my aunt and it has been working for me ever since.

In Nigeria, there are different rice recipes such as white rice, jollof rice, rice and beans, ofada rice and sauce, coconut rice and so on. Rice is that food that can be eaten at any point in time during the day either as breakfast, lunch or dinner.

INGREDIENTS

  • Rice
  • Coconut milk
  • Green Ball pepper
  • Crayfish

  • Vegetable oil
  • Onions
  • Plantain

PREPARATION

  • Break your coconut and remove the shell. Blend till its smooth in the blender. Sieve the shafts and set the milk aside.

  • Preheat the vegetable oil, slice some onions and stir fry for about 3 minutes.

  • Add the coconut milk, seasonings, crayfish, pepper and let it boil.
  • Add your already parboiled rice and cook for about 10 minutes.
  • Add your green ball pepper, fish or meat, then cover it to cook for about additional 10 minutes.
  • Turn off the heat.
  • Leave it to steam for about 3 to 5 minutes.

  • Stir together and you're done.

  • Wash your plantain, cut into desired size and fry till its golden brown.

  • Food is ready.
