▪︎Media Cebolla
▪︎Medio pimiento rojo
▪︎Un poco de perejil
▪︎Una ramita de Celery

I love to cook and I love to eat, besides, I'm always hungry hahaha, I've said it a thousand times but it's the truth.

This time I took a chance and got down to work with my usual good taste to make my first chicken rolls or medallions.

I have to tell you that I was afraid, since I didn't know if I would succeed in the rolling process, besides I had only half seen a tutorial to know what ingredients my medallions contained.

I like to innovate, I am not those people who make a recipe as they see it in a tutorial, unless it is bread or things with measure, of the rest I always put a detail special.

For this recipe, I used the following ingredients:

▪︎850grs of filleted chicken breast
▪︎400grs of Back Ham
▪︎400grs of Cheddar Cheese
▪︎50grs of Spinach
▪︎100grs of Mozzarella Cheese
▪︎2 cloves of garlic
▪︎Half Onion
▪︎Half a red pepper
▪︎A little bit of parsley
▪︎A sprig of Celery

When I saw this recipe, the person who prepared it was just passing the chicken breasts through some cumin, garlic, salt and pepper. In my case I wanted to make it different and I put the chicken in a marinade for 1 hour.

Here is the step-by-step of my recipe:

▪︎Wash the chicken breasts, which are already filleted, and place them in a bowl.

▪︎In a blender, place the dressings: half onion, parsley, coriander, half a red pepper and a little white wine or water. Blend and add this mixture to our chicken. Add salt and pepper to taste.

▪︎We place all the ingredients and get to work preparing our medallions. Take a breast fillet or place it on a board or plate and put the ham first, then the cheddar cheese, 2 or more leaves of spinach, a bit of mozzarella cheese and roll it up.

▪︎Now comes the perhaps most complicated part, tying the rolled chicken, some just put chopsticks in it, in my case, I like the technique of tying them, since at home I am an expert at tying hallacas (Venezuelan food).

▪︎Once you've got confidence, tied up all your chicken rolls or medallions very well, in the next image I present you my babies hahaha.

20201231_161705_mfnr.jpg

▪︎Once this process is ready, we heat a pan with a little oil to seal our medallions and take them to the oven once sealed.

20201231_165559_mfnr.jpg

▪︎Once sealed, they are taken to the oven for 30 minutes at 180°C and left to brown on both sides.

20201231_183318_mfnr.jpg

▪︎Once they are ready, they are allowed to cool down and are untied with the help of scissors, cut into wheels to have the shape of medallions.

In my case, I served it with a rich cream of mushrooms, I will soon share that recipe with you, as it is a good companion and it was also the first time I prepared one.

I hope you like it and also dare to prepare this rich recipe, which is very easy.
