A Witch in the Kitchen: "Eggplant Vinaigrette" [EN] // Una Bruja en la Cocina: "Vinagreta de Berenjenas" [ES]

Next Sunday is my birthday and I am already preparing for that day, although I will not have a big party I will celebrate it with my family, that will be my second birthday in quarantine, the first after overcoming the Covid-19, so that is the biggest reason to celebrate life, celebrate being with my family and have them all together and healthy, that is certainly my greatest blessing, considering how many have lost theirs in the last year. So, I have decided to make an eggplant vinaigrette which are ideal to offer with crackers or toast while we have a drink and chat, during the week we will see what else I can come up with to prepare for that day.



Eggplants are delicious in any presentation, but without a doubt the eggplant vinaigrette is one of my favorite recipes to offer as tapas, the tuna antipasto follows and the parmesan onions are there too, now that I think about it some of these other two options will also be on my table that day. What I love about this kind of recipes is that besides being easy to prepare and super yielding they are extremely delicious and you can keep them for a couple of weeks, although the onion vinaigrette can be kept for longer if vacuum packed.



The contrast of acidic, salty and spicy flavors is really delicious, of course for those who like me love this kind of flavors, even combine these eggplants with a cream cheese is a majar of gods, the truth very delicious, join me and I'll show you how you make this delight.

Ingredients

  • 1 Kilo of eggplants.
  • 4 or 5 garlic cloves.
  • 1 Cup of alcohol vinegar.
  • 2 Tbsp olive oil.
  • 1 Tsp salt.
  • 1/2 tsp cumin.
  • 1/2 tsp mustard seeds.
  • 1/4 tsp ground black pepper.
  • 1/4 tsp hot paprika.
  • 1 tsp dried oregano.












Preparation

  • Preparation time: 15 Minutes.
  • Cooking time: 5 Minutes.


To begin, peel and cut the eggplants into slices of approximately 5 millimeters, add salt and set aside. We take a pot with water to the fire and cook until it boils, when it boils we add the eggplants and let cook for about 3 to 4 minutes.




Remove from heat and drain well, let cool. On the other hand, in a blender add the garlic and oregano.





We continue adding the spices, salt, cumin, pepper, hot paprika and mustard seeds, followed by the olive oil and vinegar, we process everything very well for a couple of minutes.



Once we can handle the eggplant slices, we place in a glass container preferably and previously sterilized, layers of eggplant and between each one of them we add our preparation with the vinegar, oil and spices, until completing the container.




If you wish, at the end you can add an extra tablespoon of olive oil, cover and store in the refrigerator. The ideal is to let a couple of days to consume it so that in this way the flavors are better integrated.

El domingo que viene es mi cumpleaños y desde ya estoy preparándome para ese día, pues, aunque no hare una gran fiesta si pienso celebrarlo junto a mi familia, ese será mi segundo cumpleaños en cuarentena, el primero luego de haber superado el Covid-19, así que ese es el mayor motivo para celebrar la vida, celebrar estar con mi familia y tenerlos a todos juntos y sanos, esa es sin duda mi mayor bendición, teniendo en cuenta cuantos han perdido a los suyos en el último año. Entonces, he decidido hacer una vinagreta de berenjenas que son ideales para ofrecerlas con galletas o pan tostado mientras nos tomamos un trago y conversamos, entre semana veremos qué otra cosa se me ocurre preparar para ese día.



Las berenjenas son deliciosas en cualquier presentación, pero sin duda la vinagreta de berenjenas es una de mis recetas favoritas para ofrecer como tapas o pasa palos, el antipasto de atún le sigue y las cebollas a la parmesana están ahí también, ahora que lo pienso alguna de estas otras dos opciones también estarán en mi mesa ese día. Lo que amo de este tipo de recetas es que además de ser fáciles de preparar y super rendidoras son en extremo deliciosas y puedes conservarlas durante un par de semanas, aunque la vinagreta de cebollas puede conservarse durante más tiempo de ser envasadas al vacío.



El contraste de sabores ácidos, salados y picantes es realmente delicioso, claro para los que como yo aman este tipo de sabores, incluso combinar estas berenjenas con un queso crema es un majar de dioses, la verdad muy delicioso, acompáñame y te muestro como realizas esta delicia.

Ingredientes

  • 1 Kilo de berenjenas.
  • 4 o 5 Dientes de ajo.
  • 1 Taza de vinagre de alcohol.
  • 2 Cdas de aceite de oliva.
  • 1 Cdta de sal.
  • 1/2 Cdta de comino.
  • 1/2 Cdta de semillas de mostaza.
  • 1/4 Cdta de pimienta negra molida.
  • 1/4 Cdta de paprika picante.
  • 1 Cdta de orégano seco.











Preparación

  • Tiempo de preparación: 15 Minutos.
  • Tiempo de cocción: 5 Minutos.


Para comenzar pelamos y cortamos en lonjas de 5 milímetros aproximadamente las berenjenas, les agregamos sal y reservamos. Llevamos una olla con agua al fuego y cocinamos hasta que hierva, cuando hierva le agregamos las berenjenas y dejamos cocinar por unos 3 a 4 minutos.



Retiramos del fuego y escurrimos bien, dejamos enfriar. Por otro lado, en una licuadora agregamos los ajos y el orégano.



Continuamos agregando las especias, sal, comino, pimienta, paprika picante y semillas de mostaza, seguido del aceite de oliva y el vinagre, procesamos todo muy bien por un par de minutos.



Una vez que podamos manipular las lonjas de las berenjenas, vamos colocando en un envase de vidrio preferiblemente y previamente esterilizado, capas de berenjena y entre cada una de ellas agregamos nuestro preparado con el vinagre, aceite y especias, hasta completar el envase.



Si lo deseas al finalizar puedes agregar una cucharada extra de aceite de oliva, tapamos y guardamos en el refrigerador. Lo ideal es dejar pasar un par de días para consumirlo y que así de esta manera los sabores se integren mejor.

Whoa, another new thing for me. Never know about this way to serve eggplant. Eggplant is my fav veggies so I always searching for variation.

This was one of the first recipes that made me fall in love with eggplants, so they last a long time and are really delicious!
